Lassi

Lassi

Lassi, a beloved staple from the bustling dhabas of Punjab, finds its place on tables throughout Pakistan, especially during the sweltering summer months. This chilled delight is a refreshing respite from the heat, crafted with a care that speaks to the traditions of roadside eateries where salt is measured by instinct and the richness of ingredients is never skimped. This home version captures the essence of those dhabas, bringing their time-honored approach to your kitchen.

With its creamy texture and a hint of sweetness, lassi strikes a perfect balance between rich yogurt and a subtle touch of cardamom. The result is a smooth, cooling beverage punctuated by the occasional crunch of ice, offering a satisfying contrast. This simple yet indulgent drink should be savored slowly, whether you're enjoying it solo or sharing it with family around the table.

Ingredients

  • 400 gyogurt
  • 2 tbspsugar
  • 100 mlwater
  • 1 pinchcardamom
  • as neededice

Method

  1. Begin by ensuring your yogurt is chilled. Place 400 g of yogurt in the refrigerator for at least an hour before you start making the lassi. This step is crucial as it ensures the lassi is refreshing and cool, which is essential for an authentic experience.
  2. Measure out 2 tablespoons of sugar and set it aside. This amount balances the tanginess of the yogurt without overpowering its natural flavor. Also, measure 100 ml of water, which will help achieve the right consistency for the lassi.
  3. In a large mixing bowl, combine the chilled yogurt, 2 tablespoons of sugar, and 100 ml of water. Use a whisk or a hand blender to gently mix these ingredients together. The goal is to achieve a smooth, frothy texture without losing the yogurt's natural thickness.
  4. Add a pinch of cardamom to the mixture. This spice is key to the traditional flavor profile of lassi, providing a subtle aromatic note that complements the yogurt. Stir gently to incorporate it evenly throughout the mixture.
  5. Prepare your serving glasses by adding ice as needed. The ice will keep the lassi cold and refreshing, especially on a warm day. Pour the lassi into the glasses, ensuring each one has a generous amount of froth on top.
  6. Serve the lassi immediately in traditional glassware, if available. This not only enhances the presentation but also keeps the lassi cool for longer. Enjoy the lassi as a refreshing accompaniment to your meal or as a standalone treat.
