Limonata

Limonata, a refreshing staple of Turkish summer cafés, finds its roots in the desire to combat sweltering heat with bright, chilled refreshment. This home version mirrors how Turkish family cooks prepare it, capturing the essence of those leisurely afternoons where salt is judged by hand and fat is used generously. It's a simple yet essential part of summer, often shared among friends and family.

The taste of Limonata is a lively dance of tart lemon against the sweetness of sugar, all mellowed by cold water and the occasional whisper of mint. Served icy cold, it should invigorate with each sip, a liquid respite from the sun. Its simplicity is its charm, offering a pure and direct refreshment that embodies the essence of summer's ease.

Ingredients

  • 4lemons — juiced
  • 100 gsugar
  • 1 Lcold water
  • as neededice
  • to finishmint

Method

  1. Begin by preparing the lemons. Roll 4 lemons firmly on the countertop to loosen the juice inside. Cut each lemon in half and use a citrus juicer to extract the juice, ensuring you catch any seeds. You should aim to collect about 200 ml of lemon juice.
  2. In a large mixing bowl, combine the freshly squeezed lemon juice with 100 g of sugar. Stir with a wooden spoon until the sugar is completely dissolved. This ensures a smooth texture and prevents any graininess in the final drink.
  3. Slowly add 1 liter of cold water to the lemon-sugar mixture. Pour gradually while stirring gently to maintain the balance of flavors and to avoid losing the fresh lemon aroma. The mixture should appear clear and slightly cloudy, indicating the sugar has dissolved properly.
  4. Prepare a large pitcher and fill it halfway with ice cubes. Pour the lemon mixture over the ice, allowing it to chill quickly. The ice will also dilute the mixture slightly, achieving the perfect refreshing taste typical of Turkish Limonata.
  5. To serve, pour the chilled Limonata into traditional Turkish glassware. Add a sprig of fresh mint to each glass for an authentic touch and a burst of aroma. Serve immediately to enjoy the full freshness and vibrant flavor of the drink.
