Limoncello

Limoncello hails from the sun-drenched Amalfi Coast, where the air is perfumed with the scent of lemons and the sea. Traditionally crafted by families in this coastal paradise, it is a cherished after-dinner digestif, capturing the essence of Italian hospitality and leisurely meals shared with loved ones.

This vibrant liqueur offers a sweet, citrus-forward burst that dances on the palate, with a smooth, invigorating finish. The balance of tart lemon and just enough sweetness creates a refreshing harmony. Serve it ice-cold in small glasses, allowing each sip to transport you to the picturesque terraces overlooking the Tyrrhenian Sea.

Ingredients

  • 6lemons — zested
  • 750 mlgrain alcohol
  • 400 ggranulated sugar
  • 500 mlwater

Method

  1. Start by thoroughly washing 6 lemons to remove any wax or impurities. Use a vegetable peeler to carefully remove the zest, ensuring you only take the yellow part and leave the bitter white pith behind. This zest is where the essential oils reside, giving your Limoncello its vibrant flavor.
  2. Place the lemon zest in a large glass jar with a tight-fitting lid. Pour 750 ml of grain alcohol over the zest, ensuring the zest is fully submerged. Seal the jar and store it in a cool, dark place for at least 7 days, allowing the alcohol to extract the oils and flavors from the zest. Shake the jar gently every day to help the infusion process.
  3. After the infusion period, prepare a simple syrup by combining 400 g of granulated sugar and 500 ml of water in a medium saucepan. Heat the mixture over medium heat, stirring occasionally until the sugar is completely dissolved. The syrup should be clear and free of any sugar granules.
  4. Allow the syrup to cool to room temperature. Once cooled, strain the lemon-infused alcohol through a fine mesh sieve or cheesecloth into a large bowl, discarding the lemon zest. This will leave you with a clear, fragrant lemon-infused alcohol.
  5. Combine the cooled simple syrup with the lemon-infused alcohol, stirring gently to mix. This step is crucial to balance the sweetness and strength of your Limoncello, ensuring it is neither too sweet nor too harsh.
  6. Transfer the Limoncello into clean bottles with tight-fitting lids. Seal the bottles and refrigerate them for at least 24 hours before serving. This chilling period allows the flavors to meld and the Limoncello to reach the perfect serving temperature.
  7. Serve your Limoncello straight from the refrigerator in small, chilled glasses. Traditionally, it is enjoyed as a digestif after a meal, offering a refreshing and aromatic finish.
