Nam Manao

Serves 4 to 6 vegan

Nam Manao

Nam Manao, a refreshing Thai limeade, is a staple at bustling street stalls and family tables alike. This home version captures the essence of a Thai family gathering, where ingredients come together with a casual hand, and tables are set for sharing. The dish reflects the vibrant street culture, where flavors are bold and preparation is intuitive.

The drink is a symphony of tart, sweet, and a touch of salt, all balanced to perfection. Each sip delivers a zesty punch from the limes, countered by just the right amount of sugar. Generously served over ice, Nam Manao is both a thirst quencher and a palate cleanser, making it a beloved companion to any Thai meal.

Ingredients

  • 4limes
  • 80 gsugar
  • 800 mlwater
  • as neededice
  • 1 pinchsalt

Method

  1. Start by preparing the lime juice. Roll 4 limes on the countertop with your palm to loosen the juice inside, then cut them in half and squeeze the juice into a bowl. You should have about 120 ml of fresh lime juice. Strain the juice through a fine mesh sieve to remove any seeds and pulp, ensuring a smooth drink.
  2. In a medium saucepan, combine 80 g of sugar with 800 ml of water. Place the pan over medium heat and stir gently until the sugar is completely dissolved. This creates a simple syrup base that will balance the tartness of the lime juice.
  3. Once the sugar has dissolved, remove the saucepan from the heat and allow the syrup to cool to room temperature. This step is crucial as it ensures the flavors meld without cooking the lime juice, which can alter its fresh taste.
  4. After the syrup has cooled, add the strained lime juice to the saucepan. Stir gently to combine, being careful not to agitate the mixture too much, as you want to preserve the delicate lime aroma.
  5. Add a pinch of salt to the mixture and stir again. The salt enhances the sweetness and rounds out the flavors, giving the Nam Manao its characteristic depth.
  6. Prepare a serving pitcher by filling it with ice. Pour the lime mixture over the ice, allowing it to chill instantly. The ice not only cools the drink but also slightly dilutes it, achieving the perfect balance of flavors.
  7. Serve the Nam Manao immediately in traditional glassware, such as tall glasses or tumblers. The drink should be refreshingly cold, with a vibrant lime aroma and a perfect balance of sweet, sour, and salty notes.
