Pakistani Yogurt Drink

Serves 4 to 6 Beverage vegetarian, Beverages

Pakistani Yogurt Drink

Pakistani Yogurt Drink, also known as Lassi, is a staple across the bustling cities of Karachi, Lahore, Peshawar, and Islamabad. This refreshing beverage is a go-to during the sweltering summer months, providing a cooling respite from the heat. Though widely enjoyed, each family has its own cherished method, passed down through generations, with the recipe often adapted to personal taste and preference.

The drink itself is a smooth blend of creamy yogurt and cold water, seasoned just right with a pinch of fine sea salt. The texture is velvety, with a hint of tanginess that dances on the palate. Served chilled over ice, it quenches thirst and accompanies meals with a soothing touch, making it a beloved feature at any table.

Ingredients

  • 400 gyogurt
  • 300 mlcold water
  • 1/2 tspfine sea salt
  • as neededice

Method

  1. Start by ensuring your yogurt is fresh and chilled. Place 400 g of yogurt in a large mixing bowl. This will be the base of your drink, so it should be thick and creamy, with a slight tang that is characteristic of good yogurt.
  2. Next, measure 300 ml of cold water. Slowly pour the water into the bowl with the yogurt. Use a whisk to gently combine the two, ensuring that the yogurt breaks down smoothly into the water without forming lumps. The mixture should become a uniform, slightly frothy liquid.
  3. Add 1/2 tsp of fine sea salt to the yogurt mixture. Stir gently with the whisk to dissolve the salt completely. The salt should enhance the tanginess of the yogurt, creating a balanced flavor that is both refreshing and savory.
  4. Prepare your serving glasses by placing a few ice cubes in each. This will keep the drink chilled and refreshing when served. The ice should be just enough to cool the drink without diluting its flavor too much.
  5. Pour the yogurt drink into the prepared glasses, filling them nearly to the top. The drink should have a smooth, creamy consistency and a light, airy texture from the whisking.
  6. Serve immediately, ensuring each glass is filled with the same amount of drink and ice. This traditional Pakistani Yogurt Drink is best enjoyed fresh, capturing the tangy and salty flavors at their peak.
