Pharisäer

Serves 4 to 6 Beverage vegetarian, Beverages

Pharisäer

Pharisäer is a warm, spirited drink hailing from North Frisia, where it is traditionally enjoyed. This comforting beverage combines strong hot coffee with a generous splash of rum and a touch of sugar, creating a balance of bold and sweet flavors.

Topped with a dollop of whipped cream, Pharisäer offers a rich, creamy finish that contrasts beautifully with the robust coffee and rum base. It's a simple, yet indulgent treat that reflects the unpretentious cooking style of the region, where ingredients are used with confidence and without fuss.

Ingredients

  • 200 mlstrong hot coffee
  • 40 mlrum
  • 1 tspsugar
  • whipped creamto top

Method

  1. Begin by brewing 200 ml of strong hot coffee. Use a French press or drip coffee maker to ensure the coffee is robust and aromatic. The coffee should be freshly brewed and piping hot, as this will form the base of your Pharisäer and needs to contrast with the cool whipped cream topping.
  2. While the coffee is brewing, measure out 40 ml of rum. It's important to use a good quality rum, as its flavor will be prominent in the final drink. Also, measure 1 teaspoon of sugar, which will balance the bitterness of the coffee and the strength of the rum.
  3. Once the coffee is ready, pour it into a heatproof glass or mug. Add the 1 teaspoon of sugar to the hot coffee and stir gently until the sugar is completely dissolved. This ensures the sweetness is evenly distributed throughout the drink.
  4. Next, carefully pour the 40 ml of rum into the sweetened coffee. Stir gently to combine, being mindful not to lose the heat of the coffee or the aroma of the rum. This combination should smell rich and inviting, with the warmth of the alcohol rising from the cup.
  5. Finally, top the drink with a generous dollop of whipped cream. The cream should be lightly whipped, so it sits atop the coffee without sinking. This creates a beautiful contrast between the hot coffee and the cool, creamy topping, which is essential to the Pharisäer experience.
  6. Serve the Pharisäer immediately while the coffee is still hot and the whipped cream is fresh. The traditional presentation is important, as the layers and temperatures offer a delightful sensory experience. Enjoy this classic North Frisian treat, savoring the mix of flavors and textures.
