Ingredients

Method

  1. Begin by preparing the citrus base. Take 4 lemons or oranges and roll them firmly on a countertop to loosen the juices inside. Cut each fruit in half and use a juicer to extract the juice, ensuring you capture any seeds with a strainer. You should have about 200-250 ml of fresh juice, which will be the foundation of your drink.
  2. In a medium saucepan, combine 100 g of sugar with 1 L of water. Place the saucepan over medium heat and stir gently until the sugar is completely dissolved, creating a simple syrup. The liquid should become clear and slightly thickened, indicating the sugar is fully integrated.
  3. Once the sugar has dissolved, remove the saucepan from the heat and allow the syrup to cool slightly. This step is important to ensure that the citrus juice retains its fresh, vibrant flavor when mixed, rather than being cooked by the hot syrup.
  4. Add the freshly squeezed citrus juice to the cooled syrup, stirring gently to combine. Be careful not to stir too vigorously, as this can cause the aromas to dissipate. The mixture should be well-blended, with a consistent color and a fragrant citrus scent.
  5. Transfer the mixture to a large pitcher and place it in the refrigerator to chill thoroughly. This chilling step is crucial, as it allows the flavors to meld and ensures the drink is refreshing when served.
  6. When ready to serve, fill glasses with ice as needed. Pour the chilled Thai Fruit Drink over the ice, ensuring each glass receives an equal amount of both liquid and ice. Serve immediately in traditional glassware to enjoy the full, refreshing experience of this Thai home-cooked beverage.
