Chipá Guazú

Chipá guazú, a cherished creation of the Guaraní kitchen, holds a special place in the culinary traditions of Argentina's litoral region. This corn soufflé-bread is a staple at festive gatherings, where its golden, spotted crust is eagerly anticipated. Unlike its cousin, sopa paraguaya, chipá guazú boasts a wetter, more tender crumb, making it a distinctive choice for celebrations.

The dish offers a delightful blend of sweet corn kernels and savory cheese, harmonized by the subtle aroma of cooked onions. Each bite reveals a moist, flavorful interior, balanced by the creamy richness of milk and the gentle seasoning of salt. Chipá guazú is best enjoyed warm, allowing its comforting texture and flavors to shine through.

Ingredients

  • 6ears corn, kernels
  • 3eggs
  • 150 g (5 oz)cheese, diced
  • 1onion, cooked
  • 100 ml (1/3 cup)milk
  • to tastesalt

Method

  1. Start by preparing the corn. Take 6 ears of corn and remove the kernels by holding each ear vertically and slicing downward with a sharp knife. Once all kernels are removed, pulse them in a food processor until they are coarsely chopped. You want a texture that is slightly chunky, not a smooth puree, to give the dish its characteristic bite.
  2. In a large mixing bowl, combine the chopped corn with 3 eggs. Beat the mixture lightly until the eggs are fully incorporated. Add 150 g (5 oz) of diced cheese, 1 cooked onion (finely chopped), and 100 ml (1/3 cup) of milk to the bowl. Season with salt to taste, ensuring the mixture is evenly seasoned.
  3. Prepare your baking dish by buttering it generously to prevent sticking. Pour the corn mixture into the prepared dish, spreading it evenly with a spatula to ensure uniform baking. The dish should be large enough to allow the mixture to rise slightly as it bakes.
  4. Preheat your oven to 180°C (350°F). Place the baking dish in the center of the oven. Bake until the top is golden brown and the mixture is set, which will take about 40 minutes. You will know it is done when the top has developed a few golden spots and the center is firm yet slightly springy to the touch.
  5. Remove the dish from the oven and let it cool slightly. The inside should remain moist, reflecting the dish's traditional texture. This moistness is key to distinguishing chipá guazú from other similar dishes.
  6. Serve the chipá guazú warm. It can be enjoyed on its own or as a side dish, offering a delightful combination of sweet corn flavor and savory cheese.
