Vietnamese Griddle Bread

Vietnamese Griddle Bread is a beloved staple in many Vietnamese homes, often brought to the table during casual family meals or small gatherings with friends. This home-cooked version captures the essence of traditional Vietnamese cooking, where the salt is measured by feel and the oil is not spared. It's a dish that showcases the simplicity and warmth of Vietnamese home cooking, meant to be shared and enjoyed together.

The bread is crispy on the outside with a tender, chewy center, perfectly seasoned with just a pinch of fine sea salt. Each bite offers a satisfying balance of texture and flavor, thanks to the generous use of oil that ensures a golden finish. It's the kind of bread that invites conversation and connection, making it a cherished addition to any meal.

Ingredients

  • 400 gflour
  • 200 mlwater
  • 1 tbspoil
  • 1 tspfine sea salt

Method

  1. In a large mixing bowl, combine 400 g of flour and 1 tsp of fine sea salt. Gradually add 200 ml of water while stirring with a wooden spoon until a shaggy dough forms. Add 1 tbsp of oil and continue to mix until the dough starts to come together.
  2. Transfer the dough onto a lightly floured surface. Knead the dough by pressing it with the heel of your hand, folding it over, and rotating it slightly. Continue kneading for about 10 minutes until the dough becomes smooth and elastic. It should spring back slightly when pressed with a finger.
  3. Place the dough back into the bowl and cover it with a damp cloth. Let it rise in a warm, draft-free area until it doubles in size, which should take about 1 to 2 hours depending on the room temperature.
  4. Preheat your oven to 220°C (428°F). Once the dough has risen, gently punch it down to release excess air. Shape the dough into a round loaf by tucking the edges underneath to create a smooth top.
  5. Place the shaped dough onto a baking sheet lined with parchment paper. Use a sharp knife to make a few shallow slashes on the surface of the dough. This will allow the bread to expand properly while baking.
  6. Bake the bread in the preheated oven for about 20-25 minutes. The bread is done when it has a golden-brown crust and sounds hollow when tapped on the bottom.
  7. Remove the bread from the oven and transfer it to a wire rack. Allow it to cool completely so the crumb can set properly, which will make slicing easier and prevent it from becoming gummy.
  8. Once cooled, slice the bread and serve it warm with your meal, allowing everyone at the table to enjoy the freshly baked bread.
