Chinese Milk Pudding

Serves 4 to 6 Dessert vegetarian, Desserts

Chinese Milk Pudding

Chinese Milk Pudding, a cherished comfort in many homes, is a dish that traces its roots to the everyday kitchens of China. Traditionally served warm, this pudding is often a quiet finale to family meals, its simplicity offering a gentle contrast to the more robust flavors of earlier courses. It is a dish that embodies the warmth and care of a home-cooked meal, shared among loved ones.

The pudding should have a creamy, velvety texture, with the subtle sweetness of sugar and a whisper of vanilla mingling with the richness of milk. Each spoonful glides smoothly, leaving a lingering, comforting warmth. Generous use of fat ensures a luscious mouthfeel, while the hand-judged salt balances the sweetness, making it a delightful, understated treat.

Ingredients

  • 1 Lmilk
  • 100 gsugar
  • 40 gstarch
  • 1 tspvanilla

Method

  1. Begin by pouring 1 liter of milk into a medium saucepan. Place the saucepan over low heat and gently warm the milk until it is just above room temperature. This step ensures that the milk is ready to incorporate with the other ingredients smoothly, preventing any lumps from forming later.
  2. In a separate bowl, combine 100 grams of sugar and 40 grams of starch. Mix them thoroughly with a whisk to ensure the starch is evenly distributed throughout the sugar. This mixture will help thicken the pudding and provide a smooth texture.
  3. Gradually add the sugar and starch mixture to the warm milk, whisking continuously. Keep the saucepan over low heat and ensure the mixture is smooth and free of lumps. The constant whisking prevents the starch from clumping and ensures a silky pudding.
  4. Continue to cook the mixture over low heat, stirring frequently. As it heats, you'll notice it starting to thicken. The pudding is ready for the next step when it coats the back of a spoon and leaves a clear line when you run your finger through it.
  5. Remove the saucepan from the heat and stir in 1 teaspoon of vanilla. The vanilla adds a fragrant aroma and enhances the flavor of the milk pudding. Ensure the vanilla is fully incorporated by stirring gently.
  6. Pour the mixture into individual serving dishes or a large dish if you prefer to serve it family-style. Allow the pudding to cool at room temperature for about 10 minutes, which helps it set slightly before chilling.
  7. Transfer the pudding to the refrigerator and chill until it is fully set, which should take a few hours. The pudding is ready when it is firm to the touch and holds its shape when scooped.
  8. Once set, serve the Chinese Milk Pudding chilled. You can finish it with a sprinkle of sugar on top for added sweetness and a slight crunch. Enjoy it as a refreshing and creamy dessert, perfect for sharing with family and friends.
