Falooda

Serves 4 to 6 vegetarian

Falooda

In the bustling city of Karachi, falooda is more than just a dessert; it's a sweet escape from the sweltering heat. Born in the vibrant parlors of the city, this chilled delight is a staple on warm afternoons when families gather to enjoy a moment of respite. This home version captures the essence of those parlors, with the salt measured by intuition and the richness of ingredients embraced wholeheartedly.

Falooda is a symphony of textures and flavors, with silky falooda sev mingling with creamy kulfi and the floral touch of rose syrup. The chilled milk provides a soothing backdrop, while basil seeds add a subtle crunch. Every spoonful offers a burst of refreshing sweetness, punctuated by the playful wobble of jelly, making it an irresistible treat that beckons to be savored slowly.

Ingredients

  • 50 gfalooda sev
  • 400 mlchilled milk
  • 2 tbsprose syrup
  • 1 scoopkulfi
  • 1 tbspbasil seeds
  • 2 tbspjelly

Method

  1. Start by soaking 1 tablespoon of basil seeds in a small bowl of water. Allow them to sit for about 10 minutes until they swell and develop a gelatinous coating. This texture is crucial for the traditional falooda experience.
  2. In a medium saucepan, bring water to a boil and add 50 grams of falooda sev. Cook the sev for about 3-4 minutes until they become soft and translucent. Drain the sev and rinse under cold water to stop the cooking process, ensuring they remain separate and don't clump together.
  3. Prepare the jelly according to the package instructions, allowing it to set in the refrigerator until firm. Once set, cut the jelly into small cubes, which will add a delightful texture contrast in the falooda.
  4. In a tall glass, begin layering the ingredients. Start with a tablespoon of rose syrup at the bottom, which will give the falooda its signature floral sweetness and vibrant color.
  5. Add a layer of the cooked falooda sev, followed by a generous spoonful of the swollen basil seeds. These layers should be visible through the glass, creating an appealing visual effect.
  6. Pour 400 ml of chilled milk gently over the layers, ensuring it mixes slightly with the rose syrup to create a beautiful pink hue. The milk should be cold to provide a refreshing contrast to the other ingredients.
  7. Add a scoop of kulfi on top of the milk. The kulfi will slowly melt into the falooda, enriching the drink with its creamy texture and flavor.
  8. Finish by adding the jelly cubes on top of the kulfi. Serve immediately with a long spoon and straw, allowing each person to mix the layers to their preference and enjoy the delightful combination of textures and flavors.
