Foi Thong

Foi Thong, meaning 'golden threads,' is a celebrated Thai dessert with roots in Portuguese culinary influence, often gracing tables during auspicious occasions and festivals. This dish, with its striking saffron hue, symbolizes prosperity and good fortune. Traditionally handcrafted in Thai homes, it represents a bridge between cultures, a legacy of the 17th-century Portuguese missionaries and their sweet introductions to Thai palates.

Delicate strands of golden sweetness, Foi Thong is a confection of tender egg yolks, gently cooked in a fragrant jasmine-infused syrup. The threads are soft yet slightly chewy, exuding a rich, honeyed flavor with a whisper of floral notes. A hint of salt balances the sweetness, creating a harmonious bite that melts in your mouth. Perfect for sharing, it's often enjoyed as a symbol of unity and happiness.

Ingredients

  • 8egg yolks
  • 200 gsugar
  • 200 mlsyrup
  • 1 pinchsalt
  • 1 dropjasmine

Method

  1. Begin by separating 8 egg yolks from their whites, ensuring no trace of egg white remains, as this can affect the texture of the final product. Place the yolks in a bowl and gently whisk them until they are smooth and well combined. This will help create the fine, delicate threads characteristic of Foi Thong.
  2. In a medium saucepan, combine 200 g of sugar with 200 ml of water to create a simple syrup. Heat the mixture over medium heat, stirring occasionally until the sugar dissolves completely. Once dissolved, add a drop of jasmine essence and a pinch of salt to enhance the flavor. Allow the syrup to come to a gentle boil, then reduce the heat to maintain a steady simmer.
  3. Prepare a piping bag with a fine nozzle or use a small funnel to create the threads. Carefully pour the beaten egg yolks into the piping bag or funnel. Hold it over the simmering syrup and gently squeeze or drizzle the yolks in a thin, steady stream, moving in circular motions to form long, fine threads. The yolk should cook instantly upon contact with the syrup.
  4. Continue to drizzle the yolks until all are used, ensuring the threads do not clump together. Use a slotted spoon to gently stir and separate the threads in the syrup, allowing them to cook evenly. The threads are done when they appear firm and have a bright golden color, which should take just a few seconds.
  5. Once the threads are cooked, use the slotted spoon to carefully lift them out of the syrup, allowing any excess syrup to drain off. Place the threads on a wire rack or a plate lined with parchment paper to cool slightly. This helps the threads maintain their delicate texture.
  6. To finish, arrange the cooled Foi Thong on a serving platter. The threads should be soft yet hold their shape, with a glossy sheen from the syrup. Serve at room temperature, allowing the flavors to be fully appreciated, and enjoy this sweet delicacy with family and friends.
