Ingredients

  • 500 mlwater
  • 200 ggranulated sugar
  • 250 mlfresh lemon juice
  • 1 tbsplemon zest

Method

  1. In a medium saucepan, combine 500 ml of water and 200 g of granulated sugar. Place the saucepan over medium heat and stir gently until the sugar completely dissolves. This will create a simple syrup, which is the base for the granita. The mixture should be clear and free of sugar granules when ready.
  2. Remove the saucepan from the heat and allow the syrup to cool to room temperature. This cooling step is crucial to ensure that the lemon juice retains its fresh flavor and does not become bitter when mixed with hot syrup.
  3. Once the syrup has cooled, add 250 ml of fresh lemon juice and 1 tablespoon of lemon zest to the mixture. Stir thoroughly to combine all the ingredients. The lemon juice and zest will infuse the syrup with a bright, tangy flavor that is characteristic of Granita di Limone.
  4. Pour the lemon mixture into a shallow metal baking dish. A metal dish is preferred as it conducts cold more effectively, helping the granita freeze evenly. Place the dish in the freezer for about 30 minutes, or until the edges begin to freeze.
  5. Using a fork, scrape the frozen edges towards the center of the dish. Return the dish to the freezer and repeat this process every 30 minutes. This scraping technique creates the granular texture that is iconic to granita. Continue until the entire mixture is frozen and has a fluffy, icy consistency.
  6. Once the granita has reached the desired texture, it is ready to serve. Use a fork to fluff the granita one last time before scooping it into chilled bowls or glasses. Serve immediately for the best texture and flavor.
