Its origins trace back to the bustling bazaars, where vendors skillfully pipe the batter into hot oil, creating mesmerizing spirals that captivate both the eyes and taste buds. This home version captures the essence of those cherished street cart memories, allowing you to recreate the experience at your own table.

The taste of Jalebi is a delightful balance of crispy and syrupy sweet, with a hint of tang from the fermented batter. The saffron-infused sugar syrup envelops each spiral, delivering a burst of flavor with every bite. Best enjoyed fresh and warm, Jalebi is an irresistible treat that brings the vibrant energy of Pakistani streets into your home.

Ingredients

  • 150 gflour
  • 1 tbspyogurt
  • pinchyeast
  • 300 gsugar
  • 200 mlwater
  • for fryingoil
  • saffron — optional

Method

  1. In a medium mixing bowl, combine 150 g of flour, 1 tbsp of yogurt, and a pinch of yeast. Gradually add enough water to create a smooth, thick batter. The batter should be thick enough to hold its shape when dripped from a spoon, indicating the right consistency for piping.
  2. Cover the bowl with a clean kitchen towel and let the batter rest in a warm place for about 1 to 2 hours. This resting period allows the yeast to activate, creating small bubbles throughout the batter. These bubbles are crucial for the light, airy texture of the Jalebi.
  3. While the batter is resting, prepare the sugar syrup. In a saucepan, combine 300 g of sugar with 200 ml of water. Heat the mixture over medium heat, stirring occasionally, until the sugar dissolves completely. Add a few strands of saffron and continue to simmer until the syrup reaches a one-string consistency, which means a single thread forms when you pinch a drop between your thumb and forefinger. Set aside to cool slightly.
  4. Once the batter has rested and the syrup is ready, heat oil in a deep frying pan over medium-high heat. The oil should be deep enough to allow the Jalebi to float and fry evenly. Test the oil by dropping a small amount of batter into it; if it sizzles and rises to the surface, the oil is ready.
  5. Transfer the batter into a piping bag or a squeeze bottle with a small nozzle. Carefully pipe the batter into the hot oil in circular, spiral shapes. Fry the Jalebi until they are golden brown and crisp on both sides, turning them gently with a slotted spoon.
  6. Remove the fried Jalebi from the oil and immediately immerse them in the warm sugar syrup. Let them soak for a few seconds, ensuring they are well-coated with syrup. The Jalebi should absorb the syrup and become glossy and sticky.
  7. Lift the Jalebi out of the syrup and allow any excess syrup to drip off. Place them on a serving platter. Serve the Jalebi warm, allowing their sweet, crispy texture to be enjoyed at its best.
