Korean Nut Sweet

Korean Nut Sweet, known simply around the home table, is a cherished treat often prepared for festive occasions or when guests are expected. Its origins are deeply rooted in Korean home cooking, where the interplay of simple ingredients reflects the warmth and generosity of a shared meal. This version is how a Korean family cook would prepare it, with salt judged by hand and fat used generously.

The result is a rich, buttery confection with a delightful crunch from the nuts, balanced by the sweetness of sugar and the lightness of eggs and flour. Each bite offers a harmonious blend of textures, making it a perfect centerpiece for gatherings or a comforting indulgence at the end of a meal. The simplicity of ingredients allows the natural flavors to shine, making it a beloved staple on the Korean home table.

Ingredients

  • 200 gnuts — chopped
  • 150 gsugar
  • 100 gbutter
  • 2eggs
  • 100 gflour

Method

  1. Begin by taking 100 g of butter and 2 eggs out of the refrigerator. Allow them to come to room temperature. This ensures the butter will cream smoothly and the eggs will blend evenly into the mixture, which is crucial for achieving the right texture in your Korean Nut Sweet.
  2. In a medium saucepan, melt the 100 g of butter over low heat. Once melted, add 150 g of sugar, stirring continuously with a wooden spoon until the sugar dissolves completely and the mixture becomes smooth. This step is important to prevent the sugar from crystallizing and to create a silky base for your sweet.
  3. Remove the saucepan from heat and let it cool slightly. Crack the 2 room-temperature eggs into a small bowl and beat them lightly. Gradually add the beaten eggs to the butter and sugar mixture, stirring constantly to avoid curdling. The mixture should become glossy and well-combined.
  4. Sift 100 g of flour into the saucepan, stirring gently to incorporate. The batter should be thick but smooth, with no visible lumps of flour. This ensures an even texture in the final product.
  5. Preheat your oven to 180°C (356°F). While the oven is heating, line a baking dish with parchment paper. Pour the batter into the prepared dish, spreading it evenly with a spatula to ensure uniform thickness.
  6. Sprinkle 200 g of nuts evenly over the top of the batter. Press them gently into the surface so they adhere to the mixture. This will create a crunchy topping that complements the soft interior of the sweet.
  7. Place the dish in the preheated oven and bake until the top is golden brown and a toothpick inserted into the center comes out clean, indicating the sweet is fully cooked. This should result in a firm yet tender texture.
  8. Remove the dish from the oven and allow it to cool in the pan for about 10 minutes. This cooling period helps the sweet to set and makes it easier to cut into squares. Serve warm or at room temperature, allowing the flavors to fully develop and offering a delightful contrast between the crunchy nuts and the soft, buttery sweet.
