Kulfi

Serves 4 to 6 vegetarian

Kulfi

Kulfi, a beloved dessert in Pakistan, is a cooling indulgence perfect for the sweltering summer months. Traditionally sold by kulfiwallahs on the bustling streets, this treat is a staple at festive occasions and family gatherings. The home version brings the street-side charm into your kitchen, capturing the essence of how it’s lovingly prepared with a pinch of salt and a generous hand with fat.

Rich and creamy, kulfi boasts an indulgent texture that melts languorously on the tongue. Infused with the warmth of cardamom and the subtle sweetness of khoya, each bite offers a nutty crunch from pistachios. This delightful symphony of flavors is best enjoyed slowly, savoring the coolness that contrasts with the warm spices.

Ingredients

  • 1 Lmilk
  • 80 gsugar
  • 50 gkhoya
  • 4cardamom pods
  • 2 tbsppistachios

Method

  1. Start by pouring 1 liter of milk into a heavy-bottomed saucepan. This type of pan helps prevent the milk from scorching as it heats. Place the pan over medium heat and bring the milk to a gentle simmer, stirring occasionally to ensure it heats evenly.
  2. While the milk is heating, crush 4 cardamom pods using a mortar and pestle to release their aromatic oils. Add the crushed cardamom to the simmering milk. This infuses the milk with a warm, fragrant aroma that is characteristic of kulfi.
  3. Once the milk has reduced by about a third, add 80 grams of sugar and 50 grams of crumbled khoya. Stir continuously to dissolve the sugar and khoya completely. The mixture should begin to thicken and take on a creamy texture.
  4. Continue to cook the mixture on medium heat, stirring frequently to prevent it from sticking to the bottom of the pan. You will know it's ready when it has reduced to about half its original volume and has a rich, creamy consistency.
  5. Remove the pan from the heat and allow the mixture to cool slightly. Meanwhile, chop 2 tablespoons of pistachios finely. These will add a delightful crunch and a pop of color to the kulfi.
  6. Pour the cooled mixture into kulfi molds or small cups, filling them about three-quarters full. Sprinkle the chopped pistachios on top of each mold, pressing them lightly into the surface so they adhere.
  7. Place the molds in the freezer and allow them to chill until fully set. This will typically take several hours, but you'll know they're ready when the kulfi is firm to the touch and can be easily unmolded.
  8. To serve, briefly dip the molds in warm water to loosen the kulfi, then gently slide them out onto serving plates. Enjoy the kulfi immediately, savoring its creamy texture and aromatic flavors.
