Patbingsu

Serves 4 to 6 vegetarian

Patbingsu

Patbingsu has its roots in traditional Korean summer parlors, where the art of cooling down blends seamlessly with culinary delight. This icy treat is a staple during the sweltering summer months, offering a refreshing escape from the heat. While parlors may have their own secret touches, the home version is a cherished recipe, reflecting the way a Korean family would assemble it at the kitchen table.

The first icy spoonful of Patbingsu reveals a delightful contrast of textures and flavors. The softness of red beans mingles with chewy rice cakes, all enveloped in the refreshing chill of shaved ice. A finishing drizzle of condensed milk and a scattering of fresh fruit elevate each bite to sweet, creamy perfection. It's a dessert meant to be savored slowly, spoon by spoon.

Ingredients

  • 400 gshaved ice
  • 80 gred bean
  • 50 grice cake
  • to finishcondensed milk
  • to finishfruit

Method

  1. Begin by preparing the red bean topping. Place 80 g of red beans in a small saucepan and cover with water until the beans are fully submerged. Bring the water to a gentle simmer over medium heat. Cook the beans until they are tender and can be easily mashed with a fork, which should take about 20-30 minutes. Drain any excess water and set the beans aside to cool.
  2. While the beans are cooling, prepare the rice cakes. Cut 50 g of rice cake into small, bite-sized pieces. If the rice cakes are hard, briefly steam them over boiling water for about 5 minutes until they become soft and chewy. This will ensure they have the right texture to complement the shaved ice.
  3. Next, prepare the shaved ice. Use a shaved ice machine or a blender to finely shave 400 g of ice. The ice should be fluffy and light, resembling freshly fallen snow. Transfer the shaved ice into a large serving bowl, spreading it evenly to create a base for the toppings.
  4. Once the red beans are cooled, gently mash them with a spoon or fork, leaving some whole for texture. Spread the mashed red beans evenly over the shaved ice, ensuring that each bite will have a bit of the sweet, creamy beans.
  5. Arrange the softened rice cake pieces on top of the red bean layer. Distribute them evenly so that each serving will have a few pieces of the chewy rice cake.
  6. Finish the Patbingsu by drizzling condensed milk generously over the entire dish. The condensed milk should create a sweet, creamy layer that ties all the components together.
  7. For a refreshing touch, add your choice of fresh fruit on top. Popular options include sliced strawberries, bananas, or kiwi. The fruit should be ripe and juicy, adding a burst of freshness and color to the dish.
  8. Serve the Patbingsu immediately. The contrast between the cold shaved ice and the sweet toppings is best enjoyed fresh, making it a perfect treat for a hot day.
