Ingredients

  • 2 cupswhole milk or cream
  • 1/2 cupsugar
  • 3eggs
  • 1 tspvanilla extract
  • 2 tbspbutter

Method

  1. In a medium saucepan, combine 2 cups of whole milk or cream with 1/2 cup of sugar. Heat the mixture over medium heat, stirring occasionally, until the sugar dissolves completely and the milk is just about to simmer. This ensures the sugar is fully integrated, which is essential for a smooth custard base.
  2. In a separate bowl, whisk together 3 eggs until they are well beaten. Slowly pour the hot milk mixture into the eggs, whisking constantly to prevent the eggs from scrambling. This technique, known as tempering, gradually raises the temperature of the eggs, ensuring a smooth and creamy custard.
  3. Return the mixture to the saucepan and cook over low heat, stirring continuously with a wooden spoon. The custard is ready when it thickens enough to coat the back of the spoon, and a finger drawn across it leaves a clear line. Be careful not to let the edges curdle, as this would indicate overheating.
  4. Remove the saucepan from the heat and stir in 1 teaspoon of vanilla extract and 2 tablespoons of butter until fully melted and incorporated. The butter adds richness and a silky texture to the custard, while the vanilla provides a fragrant aroma.
  5. Pour the custard into a shallow dish and let it cool to room temperature. Once cooled, cover it with plastic wrap, pressing the wrap directly onto the surface to prevent a skin from forming, and refrigerate until firm, about 2 hours. This chilling process allows the custard to set properly, making it easier to unmold or slice.
  6. To serve, gently unmold the custard onto a serving plate. If desired, you can finish with a drizzle of chocolate sauce or a sprinkle of sugar. Serve at room temperature to highlight the creamy texture and delicate flavors, which are the hallmark of Poires Belle Hélène.
