Ingredients

  • 500 gbuffalo ricotta
  • 4 tbspwildflower honey
  • 100 gtoasted walnuts
  • 1 tsporange zest

Method

  1. Start by removing the 500 g of buffalo ricotta from the refrigerator and allow it to come to room temperature. This will make it easier to mix and ensure a smooth texture when combined with other ingredients.
  2. In a small saucepan over low heat, gently warm 4 tbsp of wildflower honey. Stir continuously to prevent it from sticking or burning. The honey should become more fluid and aromatic, which will enhance its ability to blend with the ricotta.
  3. Once the honey is warmed, set it aside to cool slightly. Meanwhile, take 100 g of toasted walnuts and roughly chop them into smaller pieces. This will add a delightful crunch and contrast to the creamy ricotta.
  4. In a mixing bowl, combine the room-temperature buffalo ricotta with the slightly cooled honey. Use a spatula to fold the honey into the ricotta gently. The mixture should become creamy and slightly sweet, with a uniform consistency.
  5. Add 1 tsp of orange zest to the ricotta and honey mixture. The zest will provide a fresh, citrusy aroma that complements the sweetness of the honey and the richness of the ricotta.
  6. Gently fold in the chopped toasted walnuts, ensuring they are evenly distributed throughout the mixture. The texture should be creamy with bits of crunchy walnuts interspersed.
  7. Transfer the mixture into a serving dish and allow it to chill in the refrigerator for about 30 minutes. This will help the flavors meld together and give the dish a firmer texture, making it easier to serve.
  8. Before serving, drizzle a little extra wildflower honey over the top for added sweetness and garnish with a few whole walnuts if desired. Serve the Ricotta di Bufala con Miele slightly chilled, allowing the flavors to shine through with each bite.
