Ingredients

  • 500 mlheavy cream
  • 150 ggranulated sugar
  • 4egg yolks
  • 200 gtorrone — chopped
  • 2 tbsphoney

Method

  1. Begin by allowing 500 ml of heavy cream and 4 egg yolks to reach room temperature. This ensures they will mix smoothly and create a stable base for the semifreddo.
  2. In a medium saucepan, combine 150 g of granulated sugar with the 4 room-temperature egg yolks. Whisk them together over low heat until the mixture becomes pale and thickened, resembling a smooth custard. This process is crucial for achieving the right texture in your semifreddo.
  3. Once the custard is ready, remove it from the heat and let it cool slightly. Meanwhile, finely chop 200 g of torrone. The torrone should be in small, even pieces so that it distributes well throughout the semifreddo, providing a consistent flavor and texture.
  4. In a large mixing bowl, whip the room-temperature heavy cream until it forms soft peaks. This means the cream should hold its shape but still have a slight droop at the tip. Be careful not to overwhip, as this can lead to a grainy texture.
  5. Gently fold the cooled custard into the whipped cream, using a spatula to maintain the airiness of the mixture. Add the chopped torrone and 2 tbsp of honey, folding until evenly combined. The honey adds a subtle sweetness and helps bind the flavors together.
  6. Transfer the mixture into a loaf pan lined with plastic wrap, smoothing the top with a spatula. Cover with more plastic wrap and place in the freezer. Allow it to chill until it is firm to the touch, which should feel solid yet slightly yielding under gentle pressure.
  7. Once set, remove the semifreddo from the freezer and let it sit at room temperature for a few minutes to soften slightly. This will make it easier to slice and enhance the creamy texture when served. Slice and serve immediately, enjoying the delightful combination of creamy semifreddo and crunchy torrone.
