Zabaglione

Zabaglione is a classic Italian dessert, cherished in the region of Piedmont. It's a simple yet elegant dish, traditionally made with just a few ingredients that highlight its rich, custard-like texture. The combination of egg yolks, sugar, and Marsala wine creates a silky and slightly frothy treat that is both sweet and aromatic.

In Italy, Zabaglione is often enjoyed as a dessert or a luxurious breakfast. The taste is a delightful balance of creamy sweetness and the subtle warmth of Marsala, with a hint of vanilla rounding it out. It's a dish that captures the essence of Italian home cooking, where simplicity and quality ingredients shine.

Ingredients

  • 6egg yolks
  • 120 ggranulated sugar
  • 120 mlMarsala wine
  • 1 tspvanilla extract

Method

  1. Before starting, ensure that the 6 egg yolks are at room temperature. This helps them blend smoothly with the sugar and Marsala wine, preventing the mixture from curdling during cooking.
  2. In a medium-sized stainless steel or heatproof glass bowl, combine the egg yolks and 120 g granulated sugar. Use a whisk to beat them together until the mixture becomes pale and thick, which should take a few minutes. The sugar should be fully dissolved, and the mixture should have a light, creamy consistency.
  3. Place the bowl over a pot of simmering water, ensuring the bottom of the bowl does not touch the water. Add 120 ml of Marsala wine and 1 tsp of vanilla extract to the egg mixture. Continue whisking constantly to prevent the eggs from scrambling. The mixture should gradually thicken and become frothy as it heats.
  4. Keep whisking the mixture over the simmering water until it reaches a thick, custard-like consistency. You will know it's ready when it forms soft peaks and coats the back of a spoon. The zabaglione should be smooth and glossy, with a light, airy texture.
  5. Once the desired consistency is reached, remove the bowl from the heat. Continue to whisk for another minute to cool it slightly and ensure a smooth texture. This step also helps to stabilize the zabaglione.
  6. Serve the zabaglione immediately while it's still warm. You can pour it over fresh fruit or serve it in individual glasses. If desired, finish with a light dusting of cocoa powder or a sprinkle of sugar for added sweetness.
