Mayonesa de Palta

Mayonesa de palta is a cherished staple in Argentinian kitchens, particularly beloved for its role in elevating simple meals. Traditionally, this avocado spread finds its way into lunchboxes, offering a creamy companion to milanesa sandwiches and a luscious topping for boiled potatoes. The dish celebrates the ripe avocado, transforming it into a versatile condiment that brings a touch of the familiar to everyday lunches.

The taste of mayonesa de palta is a delicate balance of creamy avocado and the bright acidity of lemon, resulting in a smooth, pale green spread. Its texture is both rich and light, making it an ideal partner for crispy milanesa or tender potatoes. The subtle hint of salt enhances its flavors, creating a harmonious blend that feels both indulgent and refreshing.

Ingredients

  • 2ripe avocados
  • 2 tbspmayonnaise or oil
  • 1lemon

Method

  1. Start by cutting the 2 ripe avocados in half lengthwise. Twist the halves to separate them, and remove the pits. Scoop the avocado flesh into a mixing bowl using a spoon, ensuring you get as much of the creamy green flesh as possible.
  2. Using a fork, mash the avocado in the bowl until it reaches a mostly smooth consistency. A few small chunks are fine, as they add texture, but aim for a creamy base that will blend well with the other ingredients.
  3. Add 2 tablespoons of mayonnaise or oil to the mashed avocado. Squeeze the juice of 1 lemon into the mixture, making sure to catch any seeds. Sprinkle in salt to taste, starting with a small pinch and adjusting as needed.
  4. Use a fork or a whisk to beat the mixture until everything is well combined. The texture should be smooth and creamy, with a pale green color. The lemon juice will help prevent the avocado from browning.
  5. Taste the mixture. It should have a bright, lemony flavor that balances the richness of the avocado and mayonnaise. If needed, adjust the salt or add more lemon juice to achieve the desired taste.
  6. This spread is best used the same day to ensure freshness and prevent discoloration. If storing, cover tightly with plastic wrap pressed directly onto the surface to minimize air exposure.
  7. Mayonesa de palta can be spread on bread for sandwiches, particularly milanesa, or served as a side with cold meats or boiled potatoes. Its creamy texture and refreshing taste make it a versatile addition to any meal.
