Nam Prik Pao

Serves 4 to 6 vegan

Nam Prik Pao

Nam Prik Pao, a staple in Thai cuisine, is crafted with a careful yet intuitive hand, much like the way tom yum pots are traditionally prepared. This version captures the essence of home cooking, where the balance of flavors is adjusted by the cook's own sensory judgment rather than strict measurements. It's a dish that finds its place on a communal table, inviting everyone to partake in its vibrant warmth.

The taste of Nam Prik Pao is a harmonious blend of smoky roasted chili paste, aromatic shallots and garlic, and the subtle sweetness of palm sugar, all rounded off with a touch of salt. The texture is rich and slightly chunky, offering a satisfying depth that complements the robust flavors. Enjoy it as a condiment or a central feature, allowing its complexity to enhance each meal.

Ingredients

  • 4 tbsproasted chili paste
  • 1 tbspshallot
  • 1 tbspgarlic
  • 1 tbsppalm sugar
  • to tastefine sea salt

Method

  1. Start by peeling and thinly slicing 1 tablespoon of shallot and 1 tablespoon of garlic. Use a mortar and pestle to pound them together until they form a rough paste. The texture should be slightly coarse, allowing the shallot and garlic to release their natural oils and aromas.
  2. Add 4 tablespoons of roasted chili paste to the mortar. Continue pounding until the mixture is well combined and smooth. The paste should be uniform in color, with no visible chunks of shallot or garlic.
  3. Transfer the paste to a small saucepan and place it over low heat. Gradually stir in 1 tablespoon of palm sugar, allowing it to melt and blend into the paste. The mixture should become glossy and slightly thickened, indicating that the sugar has fully dissolved.
  4. Slowly incorporate oil into the mixture by adding it in small increments, stirring continuously. You want the consistency to be rich and smooth, with the oil fully emulsified into the paste. This step helps to mellow the flavors and add depth to the Nam Prik Pao.
  5. Add fine sea salt to taste, starting with a small pinch and adjusting as needed. Stir in the salt and finely minced garlic, then taste the paste on a piece of bread. The flavor should be balanced, with a harmonious blend of sweet, salty, and spicy notes.
  6. Remove the saucepan from heat and allow the Nam Prik Pao to rest for a few minutes. This brief resting period helps the flavors to meld and intensify. Once cooled, transfer the paste to a serving dish and enjoy it as a condiment or ingredient in your favorite Thai dishes.
