Arroz Primavera

Arroz Primavera, a vibrant staple in many Argentine households, is often found gracing the tables of bustling cafeterias or serving as a thrifty solution to clear out the fridge. This dish transforms the simplest of ingredients into a colorful ensemble, making it both a beloved side and a satisfying meatless main course. Its adaptability and ease of preparation have cemented its place in the daily dining scene across the country, especially during warmer months when fresh produce is abundant.

Arroz Primavera features tender long-grain rice mixed with sautéed carrots, peppers, and peas, creating a harmonious blend of textures and flavors where the vegetables' sweetness complements the rice's earthiness, offering a comforting yet refreshing taste of simplicity.

Ingredients

  • 300 g (10 oz)long-grain rice
  • 1carrot, diced
  • 1pepper, diced
  • 1 cuppeas
  • 2 tbspoil
  • to tastesalt

Method

  1. Rinse 300 g (10 oz) of long-grain rice under cold water until the water runs clear. This removes excess starch and helps the rice grains stay separate. In a medium saucepan, bring 2 cups of salted water to a boil. Add the rice, reduce the heat to low, cover, and let it simmer until the rice is just tender and the water is absorbed. If there's any excess water, drain the rice and set it aside.
  2. While the rice is cooking, prepare the vegetables. Dice 1 carrot and 1 pepper into small, uniform pieces to ensure even cooking. Heat 2 tbsp of oil in a large skillet over medium heat. Add the diced carrot and pepper, and sauté for about 5 minutes, stirring occasionally, until the vegetables are crisp-tender and the colors are vibrant.
  3. Add 1 cup of peas to the skillet with the other vegetables. Continue to sauté for another 2-3 minutes, until the peas are bright green and heated through. The vegetables should be tender but still have a slight bite to them, giving the dish a pleasant texture.
  4. Once the vegetables are ready, gently fold them into the cooked rice using a spatula. Be careful not to mash the rice; the grains should remain separate and fluffy. Season the mixture with salt to taste, ensuring the flavors are balanced and the dish is well-seasoned.
  5. Serve the Arroz Primavera warm, either as a colorful side dish or a light meatless main. The rice should be distinct and the vegetables should provide a fresh, crisp contrast, creating a visually appealing and delicious dish.
