Bourride Sétoise

Bourride Sétoise is a cherished staple of Sète's everyday cuisine, where the scent of simmering fish and vegetables signals the gathering of family and friends. Rooted in the town's maritime traditions, this dish brings the sea to the table with a simplicity that honors the region's bountiful waters. It's a weekday affair, where the home cook's touch transforms humble ingredients into something extraordinary.

The dish should envelop the palate with the gentle embrace of firm white fish, the aromatic sweetness of leeks and fennel, and the silkiness of aïoli-enriched broth. Each spoonful offers a harmonious blend of flavors, seasoned simply with fine salt and white pepper, inviting you to savor the essence of Sète with every bite.

Ingredients

  • 1 kgfirm white fish — cut into steaks
  • 2leeks — sliced
  • 1fennel bulb — sliced
  • 1 Lfish stock
  • 4egg yolks
  • 150 mlaïoli
  • 2 tbspolive oil
  • to tastefine salt and white pepper

Method

  1. Begin by preparing the fish. Use 1 kg of firm white fish, such as monkfish or cod. Trim any excess skin or bones and pat the fish dry with paper towels. This ensures the fish sears or poaches cleanly without becoming watery during cooking.
  2. Prepare the vegetables by slicing 2 leeks and 1 fennel bulb thinly. Use a large, heavy-bottomed pot and heat 2 tbsp of olive oil over medium heat. Add the sliced leeks and fennel to the pot, stirring occasionally. Cook until the vegetables are soft and fragrant, with the leeks turning translucent and the fennel tender.
  3. Pour 1 L of fish stock into the pot with the softened vegetables. Increase the heat slightly to bring the stock to a gentle simmer. Allow the flavors to meld for a few minutes, stirring occasionally, until the broth takes on a sweet and savory aroma.
  4. Gently place the prepared fish into the simmering broth. Lower the heat to maintain a gentle simmer and poach the fish. Watch closely as the fish turns opaque and tender, indicating it is cooked through. This should happen when the fish flakes easily with a fork but remains moist.
  5. In a separate bowl, whisk together 4 egg yolks and 150 ml of aïoli until smooth. Gradually ladle a small amount of the hot broth into the egg mixture, whisking continuously to temper the eggs and prevent curdling.
  6. Slowly stir the tempered egg mixture back into the pot with the fish and broth. Keep the heat low and stir gently until the broth thickens slightly, creating a creamy texture. Season to taste with fine salt and white pepper, adjusting as needed.
  7. Serve the Bourride Sétoise immediately, ensuring the fish remains tender and the sauce maintains its creamy consistency. The dish should be aromatic and inviting, perfect for gathering everyone around the table to enjoy the flavors of Sète.
