Chana Masala

Chana Masala

Chana Masala is a staple that bridges the gap between street food vibrancy and home-cooked comfort. Originally hailing from the bustling street stalls of Pakistan, it is a dish where salt is judged by hand and fat is used generously, inviting everyone to gather around a table set for sharing. This version captures the essence of those street stalls but is adapted for the home kitchen, reflecting the way a Pakistani family cook actually puts it on the table.

Expect a hearty bowl brimming with tender chickpeas, swathed in a rich, spiced tomato sauce. The onions and tomatoes meld beautifully, creating a robust foundation for the chana masala spice blend to shine. It's a dish that feels both satisfying and comforting, a perfect centerpiece for a shared meal that speaks of warmth and authenticity.

Ingredients

  • 400 gchickpeas
  • 2onions
  • 2tomatoes
  • 1 tbspchana masala
  • 3 tbspoil
  • to tastefine sea salt

Method

  1. Start by finely chopping 2 onions and 2 tomatoes. Drain and rinse 400 g of chickpeas thoroughly to remove any excess brine. This ensures the chickpeas are clean and ready to absorb the flavors of the dish. Set aside 1 tbsp of chana masala and fine sea salt to taste, for seasoning later.
  2. In a large, heavy-bottomed pan, heat 3 tbsp of oil over medium heat. Once the oil is shimmering, add the chopped onions. Cook them slowly, stirring occasionally, until they turn a deep golden brown. This caramelization is crucial as it forms the flavorful base of the dish.
  3. Add the chopped tomatoes to the pan with the onions. Stir well and allow the tomatoes to cook down until they become soft and start to break apart, releasing their juices. This should create a thick, fragrant mixture that will coat the chickpeas.
  4. Stir in the drained chickpeas and 1 tbsp of chana masala. Mix everything thoroughly so the chickpeas are well-coated with the spiced onion-tomato mixture. Let it cook for a few minutes until the chickpeas are heated through and have absorbed some of the flavors.
  5. Check the consistency of the dish; it should be thick and not too watery. If it's too dry, you can add a splash of water to achieve the desired texture. Taste the dish and add fine sea salt according to your preference, ensuring the flavors are balanced.
  6. Once the chana masala is well-seasoned and the chickpeas are tender but still hold their shape, remove the pan from the heat. Serve the dish hot, ideally with naan or rice, and enjoy it as a family meal, reminiscent of the way it's shared at street stalls.
