Method

  2. Inspect each of the 8 fresh pork chorizos. If they appear to be under pressure and might burst during cooking, prick them once with a fork or sharp knife. This helps release steam and prevents the casing from splitting.
  3. Place the chorizos on the grill. Arrange them evenly over the heat source. Grill them, turning occasionally, to ensure even cooking. The sausages should develop a golden-brown color with a slight char, indicating they are cooking properly.
  4. Continue grilling the chorizos for about 15 to 20 minutes. The key indicator of doneness is when the juices run clear, and the internal temperature reaches at least 160°F (71°C). The sausages should feel firm to the touch.
  5. Once cooked, remove the chorizos from the grill and let them rest for a minute on a plate. This brief resting period allows the juices to redistribute within the sausage, enhancing the flavor and texture.
