The roasted chicken emerges from the oven with a crisp, golden skin, infused with thyme and the tang of lemon. Potatoes, bathed in butter, become tender and flavorful, absorbing the savory juices from the bird. Ingredients

Method

  1. Preheat your oven to 200°C (390°F). Begin by patting the whole chicken dry with paper towels. This helps the skin crisp up during cooking. Season the chicken generously with fine sea salt, black pepper, and 1 teaspoon of thyme, ensuring you rub the spices all over the skin and inside the cavity for even flavor.
  2. In a large oven-safe pan or roasting dish, heat 2 tablespoons of butter over medium-high heat until melted and slightly foamy. Carefully place the chicken in the pan, breast side down, and brown it for about 3-4 minutes on each side. This step is crucial for developing a rich, golden color and sealing in the juices.
  3. While the chicken is browning, peel and cut the 1 kg of potatoes into large chunks. Once the chicken is browned, remove it from the pan and set it aside temporarily. Add the potato chunks to the same pan, tossing them in the butter and chicken drippings to coat them evenly.
  4. Nestle the chicken back into the pan on top of the potatoes. Squeeze the juice of the halved lemon over the chicken and potatoes, then tuck the lemon halves into the pan for added flavor. This will infuse the dish with a subtle citrus aroma as it roasts.
  5. Transfer the pan to the preheated oven and roast for about 45-60 minutes. Check for doneness by inserting a knife into the thickest part of the chicken thigh; the juices should run clear, not pink, and the skin should be a deep golden brown. The potatoes should be tender and slightly crisp on the edges.
  6. If the sauce in the pan seems too thin, carefully remove the chicken and potatoes, and place the pan over medium heat on the stovetop. Allow the sauce to simmer and reduce slightly, enhancing its flavor. Taste and adjust the seasoning with more salt and pepper if needed.
  7. Once the sauce is to your liking, return the chicken and potatoes to the pan. Finish with a sprinkle of fresh thyme for a burst of herbal aroma. Serve the Fırın Tavuk directly from the pan, inviting everyone to share in this comforting, communal meal.
