Fettuccine ai Funghi e Pancetta

Serves 4

Fettuccine ai Funghi e Pancetta

Fettuccine ai Funghi e Pancetta finds its roots in the autumn kitchens of Italy, where the crisp air invites the earthiness of mushrooms and the savory richness of pancetta to transform humble ingredients into a comforting meal. As the leaves turn, this dish becomes a staple on Italian tables, celebrating the season's bounty with a nod to the rustic simplicity that defines regional cooking.

Each forkful offers a delightful balance of textures and flavors: the silkiness of fettuccine mingling with the tender bite of mushrooms and the crisp, salty allure of pancetta. The shallot adds a subtle sweetness, while a gentle dusting of Parmigiano-Reggiano completes the dish, creating a symphony of autumnal warmth and depth. Enjoy it as a standalone indulgence, embraced by those who savor the season's gifts.

Ingredients

  • 400 gfettuccine
  • 300 gmixed mushrooms
  • 100 gpancetta
  • 1shallot
  • 40 gParmigiano-Reggiano
  • 1 tbspolive oil
  • to tastefine sea salt

Method

  1. Bring a large pot of water to a rolling boil. Once boiling, add a generous amount of fine sea salt until the water tastes like the sea. This will season the fettuccine as it cooks, enhancing the overall flavor of the dish.
  2. While waiting for the water to boil, prepare the sauce. In a wide pan, heat 1 tablespoon of olive oil over medium heat. Add 100 g of diced pancetta and cook until it becomes golden and crispy, releasing its fat into the pan. This should take about 3-4 minutes, and you'll notice a savory aroma as it cooks.
  3. Finely chop 1 shallot and add it to the pan with the pancetta. Sauté until the shallot becomes translucent and soft, absorbing some of the pancetta's flavor, which should take about 2 minutes.
  4. Clean and slice 300 g of mixed mushrooms. Add them to the pan with the shallot and pancetta. Cook, stirring occasionally, until the mushrooms release their moisture and start to brown. They should be tender and have a rich, earthy aroma, indicating they are done.
  5. Taste the mushroom and pancetta mixture and add fine sea salt if needed. The combination should be savory with a hint of sweetness from the shallots.
  6. Once the water is boiling, add 400 g of fettuccine. Cook the pasta until it is just shy of al dente, as it will finish cooking in the sauce. Reserve a cup of the starchy pasta water before draining.
  7. Add the drained fettuccine to the pan with the mushroom and pancetta mixture. Toss everything together, adding a splash of the reserved pasta water to help the sauce coat the pasta smoothly. The pasta should be glossy and well-coated.
  8. Grate 40 g of Parmigiano-Reggiano over the pasta and toss again to combine. The cheese will melt into the sauce, adding a creamy texture and nutty flavor. Serve the Fettuccine ai Funghi e Pancetta hot, ensuring each plate has a generous amount of sauce and a sprinkle of extra cheese if desired.
