Fusilli al Sugo di Salsiccia

Serves 4

Fusilli al Sugo di Salsiccia

Fusilli al Sugo di Salsiccia is a cherished staple of Italian Sunday lunches, a time when the kitchen hums with anticipation. This dish is rooted in the comforting rituals of home cooking, where the unhurried pace of the day allows each ingredient to unfold its full potential. The simplicity of the recipe belies its depth, as the combination of fennel-spiced sausage and sweet tomato passata transforms ordinary pasta into something worth savoring.

The first bite greets you with the savory richness of sausage, elevated by the subtle anise notes of fennel seeds. The fusilli, with its perfect spirals, captures the sauce, ensuring every mouthful is a harmonious blend of flavor and texture. The dish is unpretentious yet deeply satisfying, embodying the Italian knack for turning humble ingredients into a symphony of taste.

Ingredients

  • 400 gfusilli
  • 400 gsausage
  • 500 gtomato passata
  • 1onion
  • 1 tspfennel seed
  • 2 tbspolive oil
  • to tastefine sea salt

Method

  1. Start by bringing a large pot of water to a rolling boil. Add a generous amount of fine sea salt to the water, which should taste like the sea. This will season the fusilli as it cooks, enhancing the overall flavor of the dish.
  2. While the water is coming to a boil, prepare the sauce. Heat 2 tablespoons of olive oil in a wide pan over medium heat. Add 1 finely chopped onion and cook until it becomes translucent and fragrant, stirring occasionally to prevent browning.
  3. Add 1 teaspoon of fennel seed to the onions and stir for about 30 seconds, allowing the seeds to release their aroma. Remove the sausage from its casing and crumble it into the pan. Cook until the sausage is browned and cooked through, breaking it up with a wooden spoon as it cooks.
  4. Pour 500 g of tomato passata into the pan with the sausage and onions. Stir well to combine, then lower the heat to a gentle simmer. Allow the sauce to cook for about 15 minutes, stirring occasionally, until it thickens slightly and the flavors meld together. Taste and adjust with fine sea salt if necessary.
  5. Once the water is boiling, add 400 g of fusilli to the pot. Cook the pasta until it is just shy of al dente, stirring occasionally. Reserve a cup of the starchy pasta water before draining the fusilli.
  6. Add the drained fusilli to the pan with the sauce. Toss the pasta and sauce together over low heat, adding a splash of reserved pasta water to help the sauce coat the fusilli evenly. The pasta should be well-coated and glossy, with the sauce clinging to each piece.
  7. Serve the Fusilli al Sugo di Salsiccia hot, ensuring each plate has a generous amount of sauce and sausage. The pasta should be tender with a slight bite, and the sauce should be rich and flavorful, with the fennel adding a subtle aromatic note.
