Gai Yang

Serves 4 to 6 chicken

Gai Yang

Gai Yang hails from Isaan, a region in northeastern Thailand known for its bold and rustic flavors. This dish is a staple of casual family meals and street food stalls alike, often prepared for gatherings where sharing is the centerpiece. In the home version, a whole chicken is marinated with a garlic pepper paste, then grilled to smoky perfection, reflecting the Thai family cook's touch.

Expect a symphony of flavors — the juicy chicken is infused with a fragrant marinade, its skin crisped to a golden hue. The accompanying nam jim jaew, a tangy dipping sauce, enhances each bite, while sticky rice serves as the perfect foil, capturing the essence of Isaan's vibrant culinary tradition.

Ingredients

  • 1whole chicken
  • 3 tbspgarlic pepper marinade
  • nam jim jaew — to serve
  • sticky rice — to serve
  • to tastefine sea salt

Method

  1. Begin by patting the whole chicken dry with paper towels to remove excess moisture, which will help achieve a crispier skin. Generously season the chicken with fine sea salt, ensuring you cover all surfaces evenly. Rub 3 tablespoons of garlic pepper marinade over the chicken, massaging it into the skin and cavity for maximum flavor.
  2. Heat a large skillet or grill pan over medium-high heat and add a generous amount of oil to coat the bottom. Once the oil is shimmering, place the chicken in the pan, breast side down, to brown the skin. Cook until the skin is golden brown and releases easily from the pan, indicating a good sear, then flip to brown the other side.
  3. Once the chicken is browned on all sides, reduce the heat to medium and add any remaining marinade and a splash of water to the pan to create a moist cooking environment. Cover the pan with a lid or foil to trap steam and cook the chicken through, turning occasionally to ensure even cooking. The chicken is done when the juices run clear and the meat is firm to the touch.
  4. If the sauce in the pan is too thin, remove the chicken and increase the heat to reduce the liquid until it thickens slightly, concentrating the flavors. Taste the sauce and adjust seasoning with more fine sea salt if necessary, keeping in mind that the sauce should be savory and slightly garlicky.
  5. To serve, carve the chicken into pieces and arrange them on a platter. Spoon some of the reduced sauce over the chicken for added flavor. Serve alongside sticky rice and a small bowl of nam jim jaew for dipping, encouraging guests to share and enjoy the meal together.
