General Tso's Chicken

General Tso's Chicken, a beloved Hunan-American creation, finds its roots in the kitchens where Chinese families in America adapted traditional flavors to local palates. This dish, a staple of Chinese-American cuisine, often graces tables during casual family dinners, where the essence of home cooking comes alive with every shared bite.

The dish delights with its balance of sweet and spicy notes, the chicken coated in a glossy, tangy glaze that clings to each piece. The heat from dried chilies subtly dances through the sauce, while ginger adds a warm undertone. Salt is added with care, and the generous use of oil ensures a satisfying richness, inviting a second helping.

Ingredients

  • 600 gchicken thigh — cubed
  • 3 tbspsoy sauce
  • 2 tbsprice vinegar
  • 2 tbspsugar
  • 8dried chilies
  • 1 tbspginger
  • as neededoil — for frying
  • to tastefine sea salt

Method

  1. Begin by patting 600 g of chicken thigh dry with paper towels to remove excess moisture. This ensures a good sear. Season the chicken with a pinch of fine sea salt to taste. In a large skillet or wok, heat enough oil over medium-high heat to coat the bottom of the pan. Once the oil shimmers, add the chicken pieces in a single layer. Allow them to brown on one side without moving, approximately 3-4 minutes, until they develop a golden crust. Turn the pieces over and brown the other side.
  2. Once the chicken is browned, add 1 tablespoon of minced ginger to the pan. Stir quickly to prevent the ginger from burning. Add 8 dried chilies, stirring them into the oil to release their aroma. Cook for about 1-2 minutes until the ginger becomes fragrant and the chilies are slightly darker.
  3. In a small bowl, mix together 3 tablespoons of soy sauce, 2 tablespoons of rice vinegar, and 2 tablespoons of sugar until the sugar dissolves. Pour this mixture into the pan with the chicken and aromatics. Stir well to coat the chicken evenly. Allow the sauce to come to a gentle simmer, which will help the flavors meld together.
  4. Let the sauce reduce slightly, stirring occasionally to ensure the chicken is well-coated and the sauce thickens. Taste the sauce and adjust with more fine sea salt if necessary, keeping in mind that the sauce should be savory with a hint of sweetness and tanginess.
  5. Once the sauce has reached a glossy consistency and clings to the chicken, remove the pan from the heat. Serve the General Tso's Chicken immediately, garnished with fresh herbs if desired, and enjoy it as part of a shared meal.
