Kerala Beef Fry

Kerala Beef Fry is a beloved dish from the kitchens of Kerala's Syrian Christian community, where it is a staple at family meals and festive occasions. This recipe captures the essence of home cooking, handed down through generations, with its liberal use of spices and coconut oil, and that essential pinch of salt always measured by instinct.

The dish is a symphony of flavors and textures, with tender beef coated in a robust mix of Kerala garam masala and black pepper, complemented by the earthy aroma of curry leaves and the sweetness of fresh coconut. It's a dish meant to be savored slowly, each bite revealing layers of spice and warmth.

Ingredients

  • 800 gbeef — cubed
  • 2 tbspkerala garam masala
  • 1coconut — sliced
  • 15curry leaves
  • 2 tbspcoconut oil
  • 1 tspblack pepper
  • 1 tbspvinegar
  • to tastefine sea salt

Method

  1. Begin by cutting the 800 g beef into bite-sized pieces, ensuring uniformity for even cooking. In a large mixing bowl, combine the beef with 2 tbsp of Kerala garam masala, 1 tsp black pepper, and fine sea salt to taste. Mix well, ensuring each piece is evenly coated with the spices, which will infuse the meat with flavor as it cooks.
  2. Heat 2 tbsp of coconut oil in a large, heavy-bottomed pan over medium-high heat. Once the oil is shimmering, add the seasoned beef pieces in a single layer, being careful not to overcrowd the pan. Allow the beef to brown deeply on all sides, turning occasionally, until a rich, dark crust forms. This browning step enhances the flavor and texture of the final dish.
  3. Once the beef is well-browned, reduce the heat to low and add 1 tbsp of vinegar to the pan. Stir to deglaze, scraping up any browned bits from the bottom of the pan. Cover the pan with a lid and let the beef braise gently in its own juices, stirring occasionally, until the meat is tender and succulent. This may take some time, so be patient and allow the flavors to meld.
  4. While the beef is braising, prepare the coconut. Crack open 1 coconut and grate the flesh finely. In a separate small pan, dry roast the grated coconut over low heat, stirring continuously until it turns golden brown and releases a nutty aroma. This step adds a rich depth of flavor to the dish.
  5. Once the beef is tender, add the roasted coconut and 15 curry leaves to the pan. Stir well to combine, allowing the coconut to absorb the flavors of the beef and spices. Cook for an additional 5 minutes, ensuring everything is well-mixed and heated through.
  6. Taste the beef fry and adjust the seasoning with more salt, if necessary. The dish should be well-balanced with a hint of spice and a rich, savory depth. Serve hot with rice, bread, or salad, allowing the flavors to shine and the dish to be enjoyed as part of a shared meal.
