Kimbap

Serves 4 to 6 rice

Kimbap

Kimbap, a beloved Korean dish, finds its roots in the casual, convivial culture of picnics and family outings. It's a staple that embodies the essence of gathering, prepared with care and shared with laughter. Home cooks craft this dish with seasoned rice and an array of fillings, all rolled snugly in sheets of nori. This version captures the spirit of a Korean family's kitchen, where salt is judged by hand and the table is always set for sharing.

The experience of Kimbap is a medley of textures and flavors: the savory bite of beef or tuna, the silky smoothness of an egg omelet, and the tangy crunch of pickled radish. Each roll is a balanced mosaic of taste and texture, meant to be savored in good company. The generous use of fat and precise seasoning make every bite a satisfying delight, inviting another and then another.

Ingredients

  • 400 gseasoned rice
  • 4 sheetsnori
  • 150 gbeef or tuna
  • 1egg omelet
  • pickled radishstrips
  • to tastefine sea salt

Method

  1. Start by preparing all your ingredients. Slice the 150 g of beef or tuna into thin strips. If using beef, season it lightly with a pinch of fine sea salt. Cut the egg omelet into thin strips, similar in size to the beef or tuna. Have your pickled radish strips ready, and set everything aside for easy assembly later.
  2. Heat a non-stick pan over medium heat and add a small amount of oil. If using beef, add it to the pan and cook slowly until the beef is browned and cooked through, about 4-5 minutes. If using tuna, you can skip this step as it is typically used canned and already cooked. Remove from the pan and set aside.
  3. Lay a bamboo sushi mat on a flat surface and place a sheet of nori on top, shiny side down. Spread 100 g of seasoned rice evenly over the nori, leaving about 2 cm of nori uncovered at the top edge. This will help seal the roll later.
  4. Arrange a few strips of beef or tuna, egg omelet, and pickled radish in a line across the center of the rice. Be careful not to overfill the roll, as this will make it difficult to close.
  5. Using the bamboo mat, start rolling the nori over the filling, pressing gently but firmly to keep the roll tight. Continue rolling until you reach the uncovered edge of the nori. Wet the edge with a little water to seal the roll.
  6. Repeat the process with the remaining nori sheets and fillings, making a total of four rolls.
  7. Once all the rolls are assembled, use a sharp knife to slice each roll into bite-sized pieces, wiping the blade with a damp cloth between cuts to ensure clean slices.
  8. Arrange the sliced Kimbap on a serving platter. Taste a piece to check for seasoning and add a light sprinkle of fine sea salt if needed. Serve immediately, sharing with family or friends as part of a communal meal.
