Krabbenbrot

Krabbenbrot hails from the breezy shores of Germany's North Sea coast, where the rhythm of the tides influences the daily table. This dish is deeply rooted in home kitchens, prepared with a straightforward touch that celebrates the local bounty. Traditionally enjoyed as a light lunch or a simple supper, it brings the essence of the sea to the table without ceremony.

The taste of Krabbenbrot is a delicate balance of briny North Sea shrimp nestled atop buttered white bread, their sweetness accentuated by a hint of lemon juice and a whisper of mayonnaise. The fresh chives add a subtle onion-like sharpness, while the fine sea salt harmonizes the flavors. It's a dish that invites a second helping without reservation, offering a taste of the sea in each bite.

Ingredients

  • 250 gNorth Sea shrimp
  • 4 slicesbuttered white bread
  • 2 tbspmayonnaise
  • 1 tbsplemon juice
  • fresh chivessnipped
  • to tastefine sea salt

Method

  1. Begin by ensuring your 250 g of North Sea shrimp are clean and dry. This step is crucial for achieving the right texture when you add them to the bread later. Pat them gently with a paper towel to remove any excess moisture.
  2. Prepare your base by buttering four slices of white bread generously. Use a soft butter for easy spreading and ensure the bread is evenly coated. This will create a rich, flavorful foundation for the shrimp.
  3. In a small bowl, mix 2 tablespoons of mayonnaise with 1 tablespoon of lemon juice. Stir until the mixture is smooth and creamy. This will add a tangy, creamy layer to complement the shrimp.
  4. Snip fresh chives into small pieces and set aside. These will be used as a garnish to add a fresh, onion-like flavor to the dish.
  5. Heat a non-stick pan over medium heat and add a small amount of butter. Once the butter has melted and begins to foam, add the shrimp. Cook the shrimp just until they turn opaque and pink, which should take only a couple of minutes. This indicates they are perfectly cooked without becoming rubbery.
  6. Remove the shrimp from the heat and immediately toss them with the lemon-mayonnaise mixture. This will coat the shrimp with a tangy flavor while they are still warm, ensuring the flavors meld beautifully.
  7. Taste the shrimp and adjust with fine sea salt to your preference. The salt should enhance the natural sweetness of the shrimp without overpowering it.
  8. To assemble, place the shrimp mixture evenly onto the buttered bread slices. Sprinkle the snipped chives over the top for a fresh finish. Serve immediately to enjoy the contrast of warm shrimp and cool, creamy mayonnaise on crisp, buttery bread.
