Ingredients

  • 4sole fillets
  • 40 g (1.5 oz)butter
  • 1lemon
  • parsley — chopped

Method

  1. Season the sole fillets lightly with salt on both sides. This will enhance the natural flavor of the fish and help it to brown slightly when cooking.
  2. In a large non-stick skillet, melt 40 g (1.5 oz) of butter over medium-high heat. Once the butter is fully melted and begins to foam, carefully place the seasoned sole fillets in the pan. Cook each fillet for 2 to 3 minutes on one side until the edges start to turn golden and the fish begins to flake easily with a fork.
  3. Gently flip the fillets using a spatula and cook the other side for another 2 to 3 minutes. The fish is done when it is opaque throughout and flakes easily. Remove the fillets from the pan and set them aside on a warm plate.
  4. Reduce the heat to low and squeeze the juice of one lemon into the same pan. Swirl the pan gently to mix the lemon juice with the remaining butter, creating a smooth sauce. This will deglaze the pan and incorporate the flavors left by the fish.
  5. Finely chop a small handful of parsley and sprinkle it over the lemon butter sauce. Stir briefly to combine, allowing the parsley to release its aroma and add a fresh note to the sauce.
  6. Return the sole fillets to the pan, spooning the lemon-parsley butter over them to coat evenly. This step ensures the fish absorbs the bright, tangy flavor of the sauce.
  7. Serve the Lenguado al Limón immediately, placing the fillets on a plate and drizzling any remaining sauce over the top. Accompany with boiled potatoes seasoned with a pinch of salt for a classic and simple side dish.
