Linguine ai Frutti di Mare

Serves 4

Linguine ai Frutti di Mare

Linguine ai Frutti di Mare finds its essence in the bustling harbor kitchens of Italy, where the day's fresh catch dictates the menu. This dish, a celebration of the sea, is often prepared by cooks who know the tides as well as the seasons, capturing the spirit of coastal life in every bite. It's a meal that echoes the rhythm of the waves, served with the simplicity and elegance of a maritime tradition.

Expect a symphony of flavors where briny shrimp, tender squid, and plump mussels meet the bright acidity of tomatoes and the herbal freshness of parsley. The olive oil weaves everything together, each strand of linguine carrying a taste of the sea, seasoned simply with fine sea salt. It's a dish meant to be savored, a reminder of the ocean's bounty.

Ingredients

  • 400 glinguine
  • 200 gshrimp
  • 200 gsquid
  • 200 gmussels
  • 300 gtomatoes
  • 1 handfulparsley
  • 3 tbspolive oil
  • to tastefine sea salt

Method

  1. Fill a large pot with water and bring it to a rolling boil over high heat. Once boiling, add a generous amount of fine sea salt until the water tastes like the sea. This will season the linguine as it cooks, enhancing the overall flavor of the dish.
  2. While the water is heating, prepare the sauce. Heat 3 tablespoons of olive oil in a wide pan over medium heat. Add the shrimp and squid, cooking until the shrimp turns pink and opaque, and the squid is tender, about 2-3 minutes. Remove them from the pan and set aside.
  3. In the same pan, add the mussels and chopped tomatoes. Cover the pan with a lid and cook until the mussels open and the tomatoes soften, releasing their juices, about 5 minutes. Discard any mussels that do not open.
  4. Return the shrimp and squid to the pan with the mussels and tomatoes. Stir to combine and taste for salt, adjusting as needed. The sauce should be fragrant and slightly briny, with a rich tomato base.
  5. Add the linguine to the boiling salted water and cook until just shy of al dente, about 1-2 minutes less than the package instructions. Reserve a cup of the starchy pasta water before draining.
  6. Transfer the drained linguine to the pan with the seafood sauce. Toss everything together over medium heat, adding reserved pasta water a little at a time until the sauce coats the pasta and everything is well combined.
  7. Chop a handful of parsley and sprinkle it over the pasta, tossing once more to distribute the herbs evenly. Serve the Linguine ai Frutti di Mare hot, ensuring each plate has a generous portion of seafood and sauce.
