Ingredients

  • 2duck breasts — skin on

  • 1 tbsphoney — optional for glaze

Method

  1. Begin by scoring the skin of the 2 duck breasts in a crosshatch pattern, being careful not to cut into the meat. This will help render the fat and create a crispy skin. Season both sides of the duck breasts generously with fine salt and black pepper to taste.
  2. Heat a heavy-bottomed skillet over medium-high heat without any oil. Once hot, place the duck breasts skin-side down in the pan. Cook for about 6-8 minutes, pressing occasionally to ensure even browning, until the skin is golden brown and much of the fat has rendered out.
  3. Flip the duck breasts over and cook the meat side for an additional 3-4 minutes. The duck should be browned on the outside and still pink in the center. Remove the duck breasts from the pan and set them aside to rest, skin-side up, on a warm plate.
  4. Pour off most of the rendered duck fat, leaving about 1 tablespoon in the pan. This will be used to cook the sauce and enhance its flavor.
  5. Add 1 tablespoon of honey to the pan and allow it to melt and caramelize slightly in the duck fat. This step will create a rich, sweet base for the sauce.
  6. Return the duck breasts to the pan, skin-side up, and spoon the honey glaze over them. Cook for an additional 1-2 minutes, basting frequently, until the glaze is sticky and coats the duck evenly.
  7. Remove the duck from the pan and let it rest for another 5 minutes. This resting period allows the juices to redistribute throughout the meat, ensuring a tender and juicy result.
  8. Slice the duck breasts thinly on the diagonal and arrange them on a serving platter. Adjust the seasoning with a final sprinkle of salt and pepper if needed, and serve immediately with your choice of traditional Gascon accompaniments, such as sautéed potatoes or a fresh salad.
