Niños Envueltos

Niños envueltos, a staple of Argentinian home cooking, brings a playful name to the table while providing a substantial meal. This dish, often prepared for Sunday lunches, features tender beef rolls that are stuffed with a selection of carrots, hard-boiled eggs, or occasionally ham. These rolls are then gently simmered in a rich tomato sauce, allowing the flavors to meld beautifully.

The taste of niños envueltos is a comforting blend of savory and slightly sweet notes, with the beef absorbing the tangy tomato sauce. The carrots add a subtle crunch, while the eggs bring a creamy texture, creating a harmonious bite in each roll. This dish is satisfying on its own, but pairs beautifully with a simple side of mashed potatoes or rice, making it a versatile addition to any meal.

Ingredients

  • 8thin beef slices
  • 2carrots, cut in sticks
  • 2eggs, hard-boiled, quartered
  • 400 g (14 oz)tomato sauce
  • 2 tbspoil
  • to tastesalt and pepper

Method

  1. Season each of the 8 thin beef slices with salt and pepper on both sides. Lay a slice flat on a clean surface and place a few carrot sticks and a quartered piece of hard-boiled egg at one end. Roll the beef tightly around the filling, ensuring the carrot and egg are securely enclosed. Use kitchen twine or toothpicks to hold the roll in place, repeating this process with each slice.
  2. In a large skillet, heat 2 tablespoons of oil over medium-high heat. Once the oil shimmers, carefully place the beef rolls in the skillet. Brown the rolls on all sides, turning them gently with tongs. You are looking for a deep golden-brown color, which will enhance the flavor and help seal in the juices.
  3. Once the rolls are browned, reduce the heat to medium and pour 400 g (14 oz) of tomato sauce over them. Ensure the rolls are mostly submerged in the sauce. Cover the skillet with a lid, allowing a small gap for steam to escape, and let the rolls simmer gently.
  4. Simmer the beef rolls for about 40 minutes, stirring occasionally to ensure even cooking. The rolls are done when the beef is tender and easily pierced with a fork. The sauce should have thickened, coating the rolls with a rich, tomatoey glaze.
  5. Once the beef rolls are tender and the sauce is thick, remove them from the heat. Serve the Niños Envueltos hot, accompanied by a side of creamy mashed potatoes or fluffy white rice, allowing the sauce to mingle with the sides for a complete and satisfying meal.
