Patlıcan Musakka is a beloved dish from the heart of Turkish home cooking, where it is often prepared for family dinners and gatherings. At its core, this musakka celebrates the humble eggplant, layered with seasoned ground beef and ripe tomatoes. It's a dish that brings warmth to any table, a staple in homes where recipes are shared through generations.

Each bite of this musakka is a comforting blend of tender eggplant, savory beef, and the slight sweetness of tomatoes, all harmonized by the richness of olive oil. The flavors meld beautifully, held together by a touch of fine sea salt and a sprinkle of black pepper, creating a dish that's both simple and deeply satisfying.

Ingredients

  • 3eggplants
  • 400 gground beef
  • 2tomatoes
  • 1onion
  • 80 mlolive oil
  • to tastefine sea salt and black pepper

Method

  1. Begin by preparing the eggplants. Slice the 3 eggplants into 1 cm thick rounds. Sprinkle them generously with fine sea salt and let them sit for about 20 minutes. This process will draw out any bitterness and excess moisture from the eggplants.
  2. While the eggplants are resting, finely chop 1 onion and 2 tomatoes. In a large skillet, heat 40 ml of olive oil over medium-high heat. Add the chopped onion and sauté until it becomes translucent and soft, about 5 minutes.
  3. Add 400 g of ground beef to the skillet with the onions. Season the meat with fine sea salt and black pepper to taste. Cook the beef until it is browned and crumbly, ensuring each piece has a deep color. This should take about 8-10 minutes.
  4. Stir in the chopped tomatoes with the beef and onions. Cook until the tomatoes have softened and released their juices, creating a rich sauce. This should take another 5 minutes. Taste and adjust the seasoning if necessary.
  5. Rinse the salted eggplant slices under cold water to remove excess salt and pat them dry with a clean kitchen towel. In a separate large pan, heat the remaining 40 ml of olive oil over medium-high heat. Fry the eggplant slices until they are golden brown on both sides and tender when pierced with a fork.
  6. Preheat your oven to 180°C (350°F). In a baking dish, layer the fried eggplant slices with the beef and tomato mixture, starting and ending with eggplant. Ensure the layers are even for consistent cooking.
  7. Cover the baking dish with aluminum foil and place it in the preheated oven. Bake for about 30 minutes, or until the musakka is bubbling and the eggplants are completely tender. The dish should have a cohesive texture, with the flavors melded together.
  8. Once done, remove the foil and let the musakka rest for a few minutes before serving. Taste for salt and adjust if necessary. Serve warm with rice, bread, or a fresh salad to complement the rich flavors of the musakka.
