Ingredients

Method

  1. Begin by preparing your vegetables: peel the eggplant and cut it into 1-inch cubes. Slice the zucchini into half-moons about 1/2-inch thick. Trim the ends of the green beans and cut them into 2-inch pieces. Dice the tomatoes into medium-sized chunks. Season all the vegetables with fine sea salt and black pepper to your taste, ensuring they are evenly coated.
  2. In a large, heavy-bottomed pot or a clay pot if you have one, heat 80 ml of olive oil over medium heat. Add a finely chopped onion and cook, stirring occasionally, until it becomes translucent and soft, but not browned. This will take about 5 to 7 minutes, and the aroma should be sweet and inviting.
  3. Add the seasoned eggplant cubes to the pot, stirring them gently to coat them in the oil and onion mixture. Let them cook for about 5 minutes, until they begin to soften and absorb the oil, becoming slightly golden at the edges.
  4. Next, add the zucchini slices and green beans to the pot. Stir to combine with the eggplant and onion, ensuring all the vegetables are coated in the oil. Cook for another 5 minutes, allowing the zucchini to soften and the green beans to turn a brighter green.
  5. Finally, add the diced tomatoes to the pot, stirring them into the vegetable mixture. Cover the pot with a lid and reduce the heat to low. Let the güveç simmer gently, stirring occasionally, until all the vegetables are tender and the tomatoes have broken down into a thick sauce. This should take about 20 to 25 minutes, and the dish should have a rich, cohesive texture.
  6. Taste the güveç and adjust the seasoning with more fine sea salt and black pepper if needed. The flavors should be balanced, with a slight sweetness from the tomatoes and a savory depth from the cooked vegetables.
