Ingredients

  • 700 gbeef cubes
  • 500 gpearl onions
  • 2 tbspbutter
  • 1 tspcinnamon

Method

  1. Begin by seasoning the 700 g beef cubes with fine sea salt and black pepper to taste. Add 1 tsp of cinnamon, ensuring each piece is evenly coated with the spices. This step infuses the meat with a warm, aromatic flavor that is characteristic of Soğan Yahnisi.
  2. In a large, heavy-bottomed pot, melt 2 tbsp of butter over medium-high heat. Once the butter is sizzling and has a nutty aroma, add the seasoned beef cubes in a single layer. Brown the meat on all sides, turning occasionally, until each piece develops a deep, rich color. This should take about 5-7 minutes, and the meat should have a caramelized crust.
  3. Remove the browned beef from the pot and set it aside. Add the 500 g of peeled pearl onions to the same pot, stirring them in the residual butter and beef drippings. Cook the onions until they start to turn golden and become slightly translucent, which should take about 5 minutes. This will add sweetness and depth to the dish.
  4. Return the browned beef cubes to the pot with the onions. Pour in enough water to just cover the meat and onions. Bring the mixture to a gentle simmer over medium heat, then reduce the heat to low. Cover the pot with a lid and let it braise slowly for 1.5 to 2 hours, stirring occasionally. The dish is ready when the beef is tender and easily pierced with a fork, and the onions are soft and infused with the beef's flavors.
  5. Taste the Soğan Yahnisi for seasoning, adding more salt if needed. The flavors should be well-balanced, with the cinnamon subtly enhancing the savory notes. Serve the dish hot, accompanied by rice, bread, or a fresh salad to complement the rich, hearty flavors.
