Sole à la Normande

Sole à la Normande hails from the lush, dairy-rich region of Normandy, where it graces family tables with its enticing aroma and comforting flavors. This dish, with its roots in everyday home cooking, reflects the abundance of Normandy's coastline and pastures. It's an invitation to indulge in the simplicity and generosity of French provincial life, where dishes are meant to be shared and savored.

The taste is a harmonious blend of the sea and the earth, where tender sole fillets meet plump mussels and delicate mushrooms, all enveloped in a creamy, cider-laced sauce. The butter-rich finish, seasoned with fine salt and white pepper, offers a luxurious, yet undeniably approachable, dining experience.

Ingredients

  • 4sole fillets
  • 12mussels — steamed and shelled
  • 8button mushrooms — sliced
  • 150 mlheavy cream
  • 100 mldry cider or white wine
  • 40 gbutter
  • to tastefine salt and white pepper

Method

  1. Begin by preparing the seafood. Rinse the 12 mussels under cold water, scrubbing them clean and removing any beards. Pat the 4 sole fillets dry with paper towels to ensure they sear well and don't release excess water during cooking. Set aside.
  2. In a large skillet or sauté pan, melt 40 g of butter over medium heat. Once the butter is foamy and begins to smell nutty, add the 8 button mushrooms, sliced thinly. Sauté the mushrooms until they are golden brown and have released their moisture, about 5 minutes.
  3. Pour in 100 ml of dry cider or white wine to the pan with the mushrooms. Allow it to simmer gently until the liquid has reduced by half, which will concentrate the flavors and create a fragrant base for the seafood.
  4. Add the mussels to the pan, cover with a lid, and cook for about 3-4 minutes, shaking the pan occasionally. The mussels are done when their shells have opened wide. Discard any mussels that remain closed after cooking.
  5. Gently place the sole fillets on top of the mussels and mushrooms. Pour 150 ml of heavy cream over the fish, and season with fine salt and white pepper to taste. Cover the pan again and poach the fish for about 5-7 minutes, or until the fillets turn opaque and flake easily with a fork.
  6. Once the sole is cooked, taste the sauce and adjust the seasoning if necessary. The sauce should be rich and slightly thickened, coating the back of a spoon. Serve the Sole à la Normande immediately, ensuring each plate has a portion of fish, mussels, mushrooms, and a generous spoonful of the creamy sauce.
