Spaghetti con le Sarde

Serves 4

Spaghetti con le Sarde

Spaghetti con le Sarde is a beloved dish from Palermo, capturing the essence of Sicily in every bite. Traditionally enjoyed throughout the year, it brings together the bounties of the sea and land in a harmonious blend. This dish reflects the Sicilian knack for combining humble ingredients into something unforgettable, making it a staple in local households.

The taste is an exquisite dance of flavors: the briny richness of sardines mingling with the sweet notes of raisins, all rounded out by the aromatic wild fennel and a hint of saffron's warmth. Pine nuts add a delightful crunch, while anchovies deepen the umami profile, creating a dish that feels both luxurious and comforting.

Ingredients

  • 400 gspaghetti
  • 400 gfresh sardines
  • 1 bunchwild fennel
  • 40 gpine nuts
  • 40 graisins
  • 4anchovy fillets
  • 1 pinchsaffron
  • 4 tbspolive oil
  • to tastefine sea salt

Method

  1. Fill a large pot with water and bring it to a rolling boil. Once boiling, add a generous amount of fine sea salt to the water. This will season the spaghetti as it cooks, enhancing the overall flavor of the dish.
  2. While the water is heating, prepare the sauce. In a wide pan, heat 4 tablespoons of olive oil over medium heat. Add the anchovy fillets and stir them until they dissolve into the oil, releasing a savory aroma. This forms the base of the sauce.
  3. Add the pine nuts to the pan and toast them gently until they turn a light golden brown. This will add a nutty depth to the sauce. Then, add the raisins and cook until they plump up, absorbing the flavors from the oil.
  4. Clean and fillet the fresh sardines, removing any bones. Add them to the pan with the anchovies, pine nuts, and raisins. Cook the sardines until they are opaque and flake easily with a fork, which indicates they are done.
  5. Add the wild fennel to the pan, stirring it into the mixture. The fennel should wilt slightly, releasing its aromatic fragrance, which is a key component of the dish's flavor profile.
  6. Dissolve a pinch of saffron in a small amount of hot water and add it to the pan. Stir well to distribute the saffron evenly, which will impart a subtle earthiness and a golden hue to the sauce.
  7. Once the water is boiling, add 400 g of spaghetti and cook until just shy of al dente. Reserve a cup of the starchy pasta water before draining the spaghetti. This water will help to bind the sauce to the pasta.
  8. Transfer the drained spaghetti to the pan with the sauce. Toss the pasta with the sauce, adding reserved pasta water as needed to achieve a silky consistency. Taste and adjust for salt, then serve the Spaghetti con le Sarde hot, capturing the essence of Palermo in each bite.
