Supremas Maryland is a nostalgic nod to 1960s Argentine restaurant fare, where it was a staple on club menus. Ingredients

Method

  1. Heat a large skillet over medium-high heat and add enough oil to cover the bottom of the pan. Once the oil is shimmering, carefully place the 4 breaded chicken breasts into the skillet. Fry them for about 4-5 minutes on each side, or until they are golden brown and the internal temperature reaches 165°F (74°C). The crust should be crispy, and the chicken should feel firm when pressed gently with a spatula.
  2. Once the chicken is cooked, reduce the heat to low and place a slice of ham on top of each chicken breast. If your household enjoys it, add a slice of cheese on top of the ham. Cover the skillet with a lid for about 1-2 minutes, just until the cheese melts slightly and adheres to the ham.
  3. While the cheese is melting, take a separate pan and heat it over medium heat. Add the cooked slices of bacon to the pan just to warm them through, about 1 minute on each side. The bacon should be crispy and warm but not overcooked.
  4. In the same pan, sauté the halved bananas over medium heat until they are golden brown on both sides, about 2 minutes per side. The bananas should be soft and slightly caramelized, giving off a sweet aroma.
  5. To assemble the dish, place each chicken breast with its ham and melted cheese onto a plate. Arrange a slice of bacon on top of each chicken breast, letting it drape over the sides slightly.
  6. Place the sautéed banana halves on the plate next to the chicken, ensuring they are visible and add a touch of sweetness to the presentation. Scatter a handful of cooked peas around the plate for a pop of color and freshness.
