Tarte Flambée Alsacienne

Hailing from the region of Alsace, Tarte Flambée Alsacienne is a beloved staple in everyday cooking, celebrated for its inviting aroma that beckons everyone to the table. Ingredients

  • 1thin pizza dough or bread dough sheet
  • 200 gfromage blanc or crème fraîche
  • 150 gsmoked bacon — thin strips
  • 2onions — very thinly sliced
  • to tastefine salt and black pepper

Method

  1. Preheat your oven to 250°C (480°F) to ensure it's hot enough for a crisp crust. Roll out the thin pizza or bread dough sheet on a lightly floured surface to fit your baking sheet or pizza stone. The dough should be very thin, almost translucent, to achieve the traditional crispiness of Tarte Flambée.
  2. Slice the smoked bacon (150 g) into small lardons. Heat a large skillet over medium-high heat and add the bacon pieces. Cook them in batches if necessary, allowing each piece to brown and render its fat. Look for a golden-brown color and crispy texture, which will add depth to the flavor of your tarte.
  3. While the bacon cooks, peel and thinly slice the onions (2 onions) into half-moons. Once the bacon is done, remove it from the skillet and set aside, leaving the rendered fat in the pan.
  4. Add the sliced onions to the skillet with the bacon fat. Cook them over medium heat, stirring occasionally, until they become soft and translucent, absorbing the bacon flavor. The onions should be tender and slightly caramelized, with a light golden color.
  5. In a bowl, mix the fromage blanc or crème fraîche (200 g) with a pinch of fine salt and black pepper to taste. Spread this mixture evenly over the rolled-out dough, leaving a small border around the edges to form a crust.
  6. Distribute the cooked onions evenly over the creamy base, followed by the crispy bacon pieces. Ensure that each slice will have a good balance of toppings for a harmonious flavor.
  7. Transfer the assembled tarte to the preheated oven. Bake for about 10-12 minutes, or until the edges of the dough are golden brown and the toppings are sizzling. The tarte should have a crisp base and a slightly bubbling surface.
  8. Remove the tarte from the oven and let it rest for a minute or two to settle. Slice it into portions and serve immediately, enjoying the contrast of the creamy, savory toppings with the crisp crust.
