Tomato Egg Stir-Fry

Tomato Egg Stir-Fry is a staple of Chinese home cooking, a dish that graces tables at any meal from breakfast to dinner. It's a comfort food, born from simplicity, with roots deeply embedded in daily life rather than special occasions. The combination of succulent tomatoes and soft, scrambled eggs is as familiar as the kitchen itself, with each family adding their own touch of flavor.

The dish should taste like a soft, savory harmony, where the sweetness of ripe tomatoes gently mingles with the richness of eggs, all uplifted by a hint of sugar and scallion brightness. Generously salted and cooked with a confident splash of oil, it embodies the warmth and spontaneity of home-cooked meals.

Ingredients

  • 4tomatoes
  • 4eggs
  • 1 tspsugar
  • 2scallions
  • 2 tbspoil
  • to tastefine sea salt

Method

  1. Start by preparing the ingredients. Dice the 4 tomatoes into medium-sized pieces, ensuring they are not too small to retain some texture during cooking. Crack the 4 eggs into a bowl, add a pinch of fine sea salt, and beat them until the yolks and whites are fully combined. Slice the 2 scallions thinly, separating the white and green parts.
  2. Heat a large non-stick or well-seasoned wok over medium heat and add 2 tablespoons of oil. Once the oil shimmers, pour in the beaten eggs. Allow the eggs to set slightly at the edges, then gently stir with a spatula, folding the eggs over themselves until they are just cooked through but still soft. Remove the eggs from the wok and set aside.
  3. In the same wok, add a little more oil if necessary, and toss in the white parts of the scallions. Stir-fry for about 30 seconds until fragrant, then add the diced tomatoes. Sprinkle 1 teaspoon of sugar over the tomatoes and stir well. Cook the tomatoes gently until they start to break down and release their juices, forming a slightly thickened sauce.
  4. Return the cooked eggs to the wok with the tomatoes. Gently fold the eggs into the tomato mixture, ensuring they are well coated with the sauce. Cook for another minute or so until the eggs are heated through and have absorbed some of the tomato flavor.
  5. Taste the stir-fry and add fine sea salt to your preference, keeping in mind that the dish should have a balance of savory and slightly sweet flavors. Sprinkle the green parts of the scallions over the top for a fresh finish. Serve the Tomato Egg Stir-Fry immediately, ideally with steamed rice, to enjoy its comforting and homey flavors.
