Ingredients

  • 400 gday-old rice
  • 2eggs
  • 100 gmixed vegetables
  • 2 tbspsoy sauce
  • 2 tbspoil
  • scallions — chopped

Method

  1. Start by preparing the ingredients: crumble 400 g of day-old rice with your hands to break up any clumps. Beat 2 eggs in a small bowl and season lightly with fine sea salt. Chop the scallions finely, separating the white and green parts. Measure out 100 g of mixed vegetables, such as peas, carrots, and corn, ensuring they are roughly the same size for even cooking.
  2. Heat 2 tbsp of oil in a large wok or a non-stick frying pan over medium heat. Once the oil shimmers, add the white parts of the scallions and sauté until they become fragrant and slightly translucent, about 1-2 minutes. This will infuse the oil with a subtle onion flavor, creating a flavorful base for the rice.
  3. Pour the beaten eggs into the pan, stirring gently with a spatula to scramble them. Cook until they are just set but still soft, then push them to one side of the pan. This technique allows the eggs to remain tender and not overcooked as you proceed with the next steps.
  4. Increase the heat to medium-high and add the mixed vegetables to the empty side of the pan. Stir-fry them for about 2-3 minutes until they are vibrant in color and just tender. This ensures the vegetables retain a slight crunch, adding texture to the dish.
  5. Add the crumbled rice to the pan, spreading it out evenly. Drizzle 2 tbsp of soy sauce over the rice and mix everything together thoroughly, breaking up any remaining clumps. Stir-fry for about 3-4 minutes until the rice is heated through and each grain is coated with the soy sauce, giving it a uniform golden-brown color.
  6. Sprinkle the green parts of the scallions over the rice and mix them in. Taste the fried rice and adjust the seasoning with fine sea salt if needed. The rice should be savory with a balanced flavor, and the vegetables should be well-distributed throughout the dish.
  7. Serve the Vegetable Fried Rice immediately, garnishing with additional scallion greens if desired. The dish should be aromatic with a pleasant mix of textures from the soft eggs and crunchy vegetables, ready to be shared at the table.
