The zucchini, tender and yielding, form a perfect vessel for the savory breadcrumb filling, all brought together with a generous pour of extra virgin olive oil. Each bite offers a comforting taste of Sicily, with the saltiness delicately adjusted to enhance rather than overpower. This is simplicity at its finest, served without fuss, just as it should be.

Ingredients

  • 4zucchini — halved and hollowed
  • 200 gbreadcrumbs
  • 100 gPecorino Siciliano — grated
  • 400 gripe tomatoes — diced
  • 4 tbspextra virgin olive oil
  • 2 tbspflat-leaf parsley — chopped
  • to tastefine sea salt

Method

  1. Begin by preparing the vegetables. Slice the 4 zucchini in half lengthwise and scoop out the flesh with a spoon, leaving about a 1/4-inch thick shell. Chop the scooped-out zucchini flesh finely and set aside. Dice the 400 g of ripe tomatoes into small pieces, ensuring they are roughly the same size as the zucchini flesh for even cooking.
  2. In a large skillet, heat 2 tablespoons of the extra virgin olive oil over medium heat. Add the chopped zucchini flesh and tomatoes to the pan. Stir occasionally and cook until the mixture becomes soft and the tomatoes release their juices, about 10 minutes. The mixture should be fragrant and slightly thickened.
  3. While the vegetables are cooking, prepare the stuffing mixture. In a bowl, combine 200 g of breadcrumbs, 100 g of grated Pecorino Siciliano, and 2 tablespoons of finely chopped flat-leaf parsley. Mix well to ensure the cheese and parsley are evenly distributed throughout the breadcrumbs.
  4. Once the zucchini and tomato mixture is ready, remove it from the heat and let it cool slightly. Add this mixture to the bowl with the breadcrumbs and cheese. Stir everything together until well combined. The stuffing should be moist but not soggy, holding together when pressed lightly.
  5. Preheat your oven to 180°C (350°F). Arrange the zucchini shells in a baking dish, cut side up. Drizzle the remaining 2 tablespoons of extra virgin olive oil over the shells and season them lightly with fine sea salt.
  6. Fill each zucchini shell generously with the stuffing mixture, pressing it down gently to pack it in. Place the baking dish in the preheated oven and bake for 25-30 minutes, or until the tops are golden brown and the zucchini shells are tender when pierced with a fork.
  7. Remove the baking dish from the oven and let the stuffed zucchini cool for a few minutes. Taste a small piece of the stuffing to check for salt, adding a sprinkle if necessary. Serve the Verdure Ripiene al Forno warm, accompanied by good bread or polenta.
