Cassata Siciliana

Cassata Siciliana hails from the sun-drenched island of Sicily, where it graces tables during festive occasions and Easter celebrations. This vibrant dessert embodies the island's rich culinary tradition, drawing from its multicultural influences. With a history stretching back to Arab rule, its preparation is a cherished ritual in Sicilian homes, passed down through generations.

The taste of Cassata Siciliana is a delightful symphony of creamy ricotta sweetened with powdered sugar, layered with soft sponge cake and fragrant marzipan. Bits of dark chocolate and candied fruit punctuate each bite, while a touch of Marsala wine adds depth. This dessert should feel indulgent and celebratory, a true reflection of Sicily's generous spirit.

Ingredients

  • 500 gricotta
  • 200 gpowdered sugar
  • 200 gsponge cake
  • 150 gmarzipan
  • 100 gdark chocolate — chopped
  • 80 gcandied fruit
  • 2 tbspMarsala wine

Method

  1. Begin by allowing 500 g of ricotta to come to room temperature. This ensures it blends smoothly without lumps. Place it in a large mixing bowl and gently fold in 200 g of powdered sugar until fully incorporated, resulting in a creamy and smooth mixture.
  2. Cut the 200 g sponge cake into thin slices, about 1 cm thick. Use these slices to line the bottom and sides of a round cake pan, pressing them gently to form an even layer. Sprinkle 2 tbsp of Marsala wine over the sponge cake to moisten it, enhancing the flavor and aroma.
  3. In a small saucepan over low heat, melt 100 g of dark chocolate until smooth and glossy. Stir continuously to prevent burning. Once melted, allow it to cool slightly before folding it into the ricotta mixture, ensuring an even distribution of chocolate throughout.
  4. Dice 80 g of candied fruit into small pieces. Gently fold these into the ricotta and chocolate mixture, distributing them evenly to ensure each slice of cassata will have a burst of fruit flavor.
  5. Roll out 150 g of marzipan into a thin sheet, about 3 mm thick. Carefully lay this over the top of the ricotta mixture in the cake pan, pressing gently to adhere it to the filling. Trim any excess marzipan from the edges.
  6. Cover the assembled cassata with plastic wrap and refrigerate for at least 4 hours, or until the filling is firm and set. This chilling time allows the flavors to meld and the texture to stabilize.
  7. Once set, carefully remove the cassata from the pan. If needed, run a knife around the edges to loosen it. Transfer to a serving plate, slice, and serve chilled, allowing the flavors and textures to shine.
